Ground Chicken Recipe For Chicken Burgers

I found this delicious Ground Chicken Recipe for Chicken Burgers and my family love it - especially the kids. It's full of flavour and lower in fat than a regular beef burger because it uses ground chicken breast meat which contains minimal fat. Get the kids to help you assemble the chicken burgers and even make their own sauces. The recipe contains optional extras like cheddar cheese to enclose in the chicken burger patties and chilli powder for an extra spicy taste.

Chicken Burger Recipe Ingrediets


oil, for cooking
1 large onion, finely chopped
750 g (1 1/2 lb) chicken mince
1 teaspoon paprika
1 - 2 teaspoons chopped red chilli (optional)
3/4 cup (60 g/2 oz) fresh breadcrumbs
1 egg, beaten
2 tablespoons chopped fresh lemon thyme or chives
6 slices of Cheddar cheese (optional)
30 g (1 oz) butter
1 -2 cloves garlic, crushed
6 crusty bread rolls
lettuce, tomato, extra sour cream, pickled cucumbers and sweet chilli sauce, to serve


Fry the onion in a bit of the oil over medium heat until golden. Drain the onion on paper towels and cool slightly.

This is where it gets messy. Wash you hands thoroughly and then get ready to mix with your fingers. In a large bowl combine the onion, chicken mince, paprika, chilli, breadcrumbs, beaten egg, lemon thyme and some salt and freshly ground black pepper. Mix it well using your hands. Divide the mixture into 6 equal portions and shape into round balls. If you want a cheese burger then press a piece of cheese into the centre of each ball and mould the mixture to completely enclose the cheese. Flatten the balls slightly and shape to make chicken burger patties.

Heat the butter and 1 tablespoon of oil in a large frying pan. Add the garlic. When the mixture is foaming, add the patties, pressing with a spatula to flatten slightly. Cook over medium heat for about 3 minutes on each side, or until the patties are nicely browned and the meat cooked through. If you put cheese in the middle then the cheese should be melted.

Cut the bread rolls in half. Toast if you prefer and spread with a little butter. Fill the rolls with lettuce and tomato slices, a chicken patty, sour cream, some pickled cucumbers and sweet chilli sauce.

Wonton - Fun Facts About the Chinese Dumpling

Wonton, or Chinese dumpling, is a staple food popular throughout China. As a Cantonese I am proud to say that the word Wonton comes from Cantonese rather than Mandarin, as the dumplings were likely introduced to the West by early settlers in Chinatown, who came primarily from the Cantonese-speaking coastal cities in Southern China.

In Chinese, wonton means "swallowing clouds". If you are familiar with Chinese art you may also find that the wonton, floating in the broth, resembles the traditional "spiral cloud" motif in Chinese handicrafts. One famous example: The Torch for the Beijing Olympics is known as the "Lucky Cloud Torch" in Chinese.

Wontons are slightly different in various part of China. May I give you an introduction?

Cantonese Wonton

The Cantonese wonton has a yellow wrapping (made from flour and egg: think pasta sheet) typically filled with minced pork and shrimp. The dumplings are usually served in egg noodles, a type of thin, very chewy (almost like rubber band) noodle prevalent in Southern China. Interestingly, the preparation of the broth is an art in itself -- all the best wonton shops have their own secret recipes for the soup base; but in general, shrimp shells is believed to be a major ingredient.

Shanghainese Wonton

This type of Chinese dumpling has a white, thicker wrapping (made from flour only) and the filling includes minced pork and Shanghainese bok choy. In some variations chopped leeks and spring onions are added. For the soup, the soup base is usually made from mixing soy sauce, water and a bit of seasoning, mostly to give color to the unappealing white appearance. (White is a taboo color for traditional Chinese because it is associated with death).

While minced pork remains the most popular ingredient, international cuisines have inspired a lot of new varieties: chicken with mushroom, carrot, beans with corn, preserved vegetables with black fungus... exciting!

Sichuan Wonton

Known as "Chao Shou" (crossed hands), they also have a white, relatively thick wrapping. Chao Shou is boiled and served in very, very spicy sauce, as in almost all Sichuan cuisine.

As to why this particular dumpling is called Chao Shou, I think its name originates from how it is wrapped: the wrapping is first folded into a triangular shape and the two sides of the triangle is brought to the front, overlapping each other, resembling a person folding his arms.

The Shanghainese wonton is also folded into a triangle, but a slight twist in the second folding gives it a lovely shape. For the Cantonese style, the wonton is simply wrapped by bringing the four corners together and squeeze. Cantonese wontons first appeared as street foods, and hawkers got to find the quickest way to wrap up the wontons.

You may have noticed that I never mention fried wontons. Yes, we never fry our wontons. They are boiled, then served in plate or in a bowl of broth. That's why they are also known as the Wonton Soup.

What's the Difference Between Jiaozi (Gyoza) and Wonton?

Oh, they are different. Jiaozi, or Gyoza in Japanese, are basically potstickers: they have a thicker wrapping, with texture similar to thick ravioli wraps. They also take a longer, flatter, horn-like shape ("Jiao" sounds like "horn" in Mandarin). Depending on the provinces in China you can taste jiaozi made from pork, beef, lamb, chicken or fish mixed with a wide variety of vegetables. They can be boiled, steamed, or pan-fried, and are served with dipping sauce. Red vinegar, soy sauce and chili sauce are among the most popular.

Cooking With Chicken Livers

Chicken liver can be used to make all kinds of appetizers and soup recipes. The livers can also be used to make a tasty lunch or snack. Popular chicken liver recipes include chicken pate, chicken mousse, chicken wraps,all made from the livers of the chicken and also fried chicken liver with onions.

Liver is often coated in breadcrumbs or flour to give it a nice texture and some bite. Chicken liver soup is especially tasty and garlic, onions and a little white wine really bring out the flavor of the livers when you make a soup with them.

You can serve the livers whole or chopped and you can combine them with all kinds of other flavors to make tasty liver dishes. Liver is nutritious and especially high in iron. If you want to increase your iron consumption, there are plenty of liver recipes you can make. Drink some orange juice with the liver recipe to increase your body's absorption of the iron.

How to Cook Chicken Liver

The livers need to be cooked thoroughly, like chicken, to make sure any organisms or bacteria are destroyed. You should saute the livers in small batches and give them at least five minutes or cook them until an internal temperature of 160 degrees F has been maintained for a couple of minutes. You can check the bigger pieces with a food thermometer just to make sure. The livers of the chicken need to be cooked until they are no longer bloody in the middle.

Recipe for Cantonese Chicken Liver Appetizers

What you will need:

1 lb chicken liver
1/4 teaspoon five spice powder
2 tablespoons light soy sauce
1/2 teaspoon sesame oil
6 tablespoons peanut oil
1/4 teaspoon white sugar
1 tablespoon cream sherry or brandy
2 cups green salad leaves
1 lemon, in wedges
1/2 cup cornstarch
1 beaten egg
Salt and black pepper

How to make it:

Take the gristle and fat off the livers and rinse them under water. Bring a pot of water to a boil, and then add the chicken livers. Take the water off the heat and let it stand for a couple of minutes. Drain the livers and pat them dry.

Combine the sherry or brandy with the soy sauce, sugar, sesame oil, five spice powder, salt, pepper, and two tablespoons of the peanut oil in a bowl and marinate the livers in this mixture for half an hour. Drain and discard the marinade. Add the egg to the livers. Spread the cornstarch over a plate. Add the remaining peanut oil to a wok.

Dip a chicken liver in the cornstarch, and then add it to the pan. Repeat with the remaining chicken livers. You might have to cook them in batches. After two minutes, turn the livers over and cook the other side.

Drain them on paper towels. Arrange the salad leaves on a serving plate, then add the livers and serve with the lemon wedges and some toothpicks so people can pick them up.




Using the livers of the chicken might make a change from the dishes you usually prepare, but there will always be room in our hearts for a classic chicken soup recipe. Dishes like chicken soup never go out of vogue because they are so comforting, easy to make and flavorful.

Some Easy Healthy Recipes for Child-Friendly Meals

It can be a difficult task for many parents to get their children to eat healthy foods, especially if healthy foods were not introduced to them at a very young age or if they are simply averse to the taste of many vegetables but it is definitely possible to teach children and encourage them to eat healthy foods while at the same time explaining to them on their level why they need to eat these foods.

The best food for an infant is milk, whether this is breast milk or formula; this is the beginning of a child's healthy diet. As the child gets older they can then start to eat more solid foods and the first solid foods that you introduce to your child are very important because if you train a child to eat healthily then they will most likely continue to do so throughout their life.

Foods that are soft and easy to chew and swallow are the best solids to start your child on and this can include anything from pureed root vegetables and mashed potatoes, to soups and fruit compotes. Many mums and dads actually make their own baby food rather than buying jarred foods, which is easy because all you need to do is cook healthy foods and blend them into a smooth and easy to digest consistency; it almost always works out cheaper to make your own baby food too. Why not cook in batches and freeze portions? This way, your homemade baby food will be just as convenient as buying it ready made from the supermarket and you will know exactly what has gone into it.

Fruits are great for your child to eat as well and when they are first introduced to your children they will need to be mashed up for them to eat or cut into small pieces depending on how many teeth your child has. Once your child has been eating fruits and mushy foods for a few months you can then start your child on regular vegetables and cereals that don't contain a lot of added salt or sugar.

Some easy healthy recipes for your child could include whole wheat pasta with roasted vegetables and roasted chicken in a freshly made tomato sauce, homemade pizzas with plenty of vegetables and protein from good quality ham or chicken pieces and pan fried salmon fillets with sweet potato chips and a fresh green salad. All of this dishes can be made quickly and you will often be able to get your child involved in the preparations, which will teach them how to cook, what different foods are and the importance of making meals using fresh and delicious ingredients.
