Chicken Fried Steak - A Southern Tradition

Zac Brown did the song, and now you can enjoy them! Chicken Fried Steak is an all time American favorite and the biggest seller in restaurants from Nebraska to the Deep South. If done right they are delicious!

Chicken Fried Steak is commonly called a chicken fry. Do not confuse this with chicken, they are pure beef! The name comes from the coating on these delicious minute steaks.

Pan Fried Chicken

Purchase one ½ lb minute steak per person when serving these as the main course. They can be cut into strips and made for a snack as well.

½ lb minute steaks 2eggs Milk Saltine crackers, crushed into a variety of sizes. Not finely crushed Melted butter Cooking oil.Beat the eggs and about 1 cup milk in a bowl, set the minute steaks in this mixture. Place the cracker crumbs in a cake pan and press the minute steaks onto them, turning and pressing and repeat.

Heat a Cast Iron Skillet with a thin layer of oil and place the minute steaks in them. A twelve inch skillet can fit two to three steaks generally. With a pastry brush I brush the melted butter over the top. Allow to cook over medium high heat until brown on one side. Turn and repeat the on the other side. Try to not turn more than once or the coating will come off.  Total cooking time is about 10 to 12 minutes depending on the thickness of the minute steak.

These can be served with cream gravy, generally on the side. This varies from town to town, some do, some don't, and a very few offer brown gravy. It's all a matter of personal preference. Baked potatoes, hash browns or French fries generally compliment the meal as does a nice green salad and fresh green beans.

Hamburger can also be shaped and prepared in the same manner.

I prepare the green beans either on the stove top or the oven. If I am fixing them on the stove,  I generally brown a couple of pieces of bacon and lightly cook .25 cup onion in a small cast iron skillet, then I break up the crisped bacon and add green beans, .25 cup of water and .5 tsp garlic salt. Simmer for 10 to 15 minutes

If I am preparing the green beans in the oven, I use two cans of green beans drained, one small can of cream of mushroom soup, one small can of cream of celery soup, once half soup can of milk, one cup shredded cheese and .5 tsp each of garlic and onion salt. I mix everything together in a large bowl and then place the ingredients in a vegetable clay baker and bake 45 minutes at 350.

This is a meal your family will love or at least mine does!!

Deep Fryers - Our Recipe For Great Southern Fried Chicken

As an avid cooking and deep frying fan from south Louisiana, I have tried many different recipes to find the perfect home-fried chicken. I have dabbled with various south Louisiana spices and deep fryers looking for the right combination. Sometimes, less can mean more when referring to ease of cooking and quality of the final product. In this article, I will show the recipe that I find to be the easiest and most effective way for deep frying chicken southern style. Personally, I prefer to use a professional style deep fryer with all the bells and whistles. However, a simple deep frying pot is all you really need to get started.

Recipe for Southern Fried Chicken

Pan Fried Chicken

Ingredients needed include:

1. Canola oil (or any other frying oil that you might prefer)

2. Chicken (cut into pieces)

3. Ice

4. Cayenne Pepper

5. Zatarain's chick fri

6. Zatarain's fish fri

7. Garlic power

8. Water

Steps:

1. The first thing we do is heat our grease (canola oil). Using one of our deep fryers, we place enough canola oil to cover all the chicken we will be boiling. Do not overload the deep fryer (or frying pot). We suggest only frying a few pieces of chicken at a time.

2. While the grease is heating, we clean our chicken in water and then cut into pieces that will be fried. Then, we place the cut pieces into a pan of water making sure that all pieces are covered.

3. Next, we sprinkle cayenne pepper over the water and mix with the chicken (the amount of pepper used depends on the fryer's preference); as a general rule, make sure that you at least cover the top water layer.

4. While the chicken is soaking and the grease/oil is heating, we prepare the following mixture: one bag of Zatarain's chick fri + one bag of Zatarain's fish fri. To this, we add cayenne pepper and garlic powder (again, the amount depends on the deep fryer's preference); the first time using this recipe, we suggest using small amounts of each (1-2 teaspoons). You can always adjust with future recipes.

5. Once the oil/grease is boiling (temperature of about 350 degrees), we remove the chicken from the water and place in our batter mix (see step 4). Make sure each piece of chicken is appropriately battered.

6. Add the chicken to the deep fryer and cook for approximately 16 minutes. If using a deep fryer with an internal basket, you can simply raise the basket once the chicken is cooked. Always follow the manufacturer's guidelines when using deep fryers. Safety is very important because you want to do everything possible to avoid getting burned with hot grease. If you have any questions or doubts at all about what you are doing, make sure to get these doubts cleared before using hot grease or deep fryers.

7. Once the chicken is cooked, remove carefully from the deep fryer or frying pot using the appropriate utensil(s). Once cooled enough, enjoy some of the best southern fried chicken imaginable.

Southern Fried Pork Chops

4 to 6 pork chops, about 1/2 in. thick
salt and pepper
1/4 cup vegetable oil
2 tbsp. flour
1 to 2 cups whole milk or buttermilk
1/2 tsp. browning sauce, such as Kitchen Bouquet
1/4 tsp. salt
1/8 tsp. pepper

Pan Fried Chicken

Wash pork chops and trim the excess fat. Sprinkle the chops lightly with salt and pepper. Heat the vegetable oil in a skillet until it is hot and smoking. Brown the chops on both sides; then drain on paper towels. Pour off most of the oil, but reserve 2 tbsp. of the drippings in the skillet to make the gravy.

Add the flour to the drippings in the skillet, and stir until the mixture is smooth. Cook about 1 minute more, stirring constantly. Slowly and gradually add the milk. Cook over medium heat, stirring constantly, until thick. Stir in the browning sauce, 1/4 tsp. salt and 1/8 tsp. pepper. Add the browned pork chops to the cream gravy. Cover and cook over low heat about 45 minutes. Turn the chops a couple of times.

Many Southern fried pork chop recipes include a pinch of crushed red pepper for extra fire. You can also add garlic powder or try using a meat seasoning dry rub in place of the salt and pepper.

If you want to cook a larger number of chops, you'll need to fry in batches. Too many chops in the skillet will lower the cooking temperature of the oil. You'll get chops that are greasy and unevenly cooked.

You can also find healthier versions of fried pork chop recipes. Here's one to make in the oven. It's easy and delicious.

4 center-cut pork chops
1 egg
3 tbsp. milk
1/4 tsp. paprika
1/4 tsp. garlic powder
salt and pepper
1/2 cup seasoned breadcrumbs
cooking spray

Trim the fat from the chops. Combine the egg, milk and seasonings. Dip the chops in the egg mixture and dredge in breadcrumbs. Place chops on a rack in a pan that has been coated with cooking spray. Bake at 350 degrees for about an hour or until done, turning once.

For barbecued pork chops, just substitute a barbecue dry rub for the paprika, garlic powder, salt and pepper. When the chops are almost done, pour about a cup of barbecue sauce over them. Offer extra barbecue sauce on the side.

Serve the chops with creamed corn, mashed potatoes to soak up the extra gravy, homemade buttermilk biscuits and sliced tomatoes fresh from the garden.

Real Southern Fried Chicken Recipe

Real Southern Fried Chicken is a dish often imitated, but seldom duplicated except in the kitchen of a good Southern cook. You will see many restaurants advertise Southern Fried Chicken but if you have ever had the real deal, you will be disappointed in what they offer.

Here is the secret. Simplicity and cooking technique. Real Southern Fried Chicken is very
simple with few ingredients. It's when you start adding enhancements that you begin to turn it
into something that does not even resemble Southern Fried Chicken. So, keep it simple.

Ingredients

Fresh, cut-up chicken
2 cups flour
1 tablespoon salt
1/2 tablespoon black pepper
1 whole egg
3/4 cup milk (I prefer buttermilk but you can use regular milk)
Cooking oil as required (see following)- (I like Corn Oil or peanut oil)Directions
Using a large frying pan (cast iron works best), fill with enough cooking oil to provide about
3-4 inches oil depth in the pan.
Place frying pan on stove top burner on medium-high heat
In a medium size mixing bowl, combine egg and milk, mix well
On a large plate, combine flour, salt, pepper, mix well
Wash chicken parts
Dip each chicken part in the egg-milk wash, then roll in flour mix to coat on all sides
Check oil temperature (place handle of wooden spoon in oil. You should get bubbles rising around the handle)
Place chicken parts in frying pan (should not be touching each other)
Fry chicken on first side 1 minute then turn to other side for 1 minute
REDUCE HEAT TO MEDIUM
Continue to fry on each side until golden brown
Should take about 5-7 minutes first side and 4-5 minutes other side

Tip: Even though you have a golden brown crust on the outside, the inside may not be fully cooked,
especially if you are using frozen chicken which you defrosted. When you have a golden crust, cut
deep into one of the thickest pieces with a sharp knife and observe for any pink coloring.
If pink (or red) continue cooking (reduce heat slightly). There should be no pink!

Refrigerate left overs for up to 2 days. Although it will lose it's crunchiness, cold fried
chicken is very tasty the next day. I would not re-heat it. I like it served cold the next day.

Fried chicken goes with nearly any vegetable but I like to serve with turnip greens, black eyed peas and cornbread. In the summer, when fresh vegetables are available, I like to also include baby green onions and radishes served on the side. And do not forget a tall glass of iced tea to wash it down.

Southern Crispy Fried Catfish

You don't have to be from The Delta or The South to enjoy mouthwatering southern fried crispy catfish. This fish is so succulent and moist that it just melts in your mouth. I am sure that fried catfish has been around as long as the south has.

Come into the kitchen with me and enjoy one of my family favorites.

Items needed
1 cup of yellow or white cornmeal
1/4 cup all purpose flour
2 teaspoons of salt
1/2 teaspoon of ground red pepper
1/2 teaspoon of black pepper
2 teaspoons of garlic powder
1 teaspoon of onion powder
1/4 teaspoon salt
8 4 to 6 oz catfish fillets
large deep cast iron skillet, dutch oven or heavy pot
vegetable oil or peanut oil for frying

Rinse fish and pat dry to remove moisture. Sprinkle fish with the 1/4 teaspoon of salt. Mix meal, flour, salt, peppers, garlic powder and onion powder in a large shallow dish. Dredge fish in cornmeal mixture, coating evenly. Pour oil to depth of about two inches in skillet. Heat to 350 degrees or until oil is hot. Cook in batches of three for 5 or 6 minutes or until fillets are crispy and golden brown. When done remove with slotted spoon and drain on paper towels.

If you wish to keep fish warm after draining, place on a wire rack in an aluminum foil lined shallow pan or cookie sheet in a 250 degree oven. Do not cover fish, covering removes the crispness.

This recipe yields 4 southern servings and goes well with boiled corn, hush puppies and slaw. We also like baked beans, hush puppies and slaw. An old southern favorite is plain pasta with red sauce, corn muffins and slaw. To add a little zest use a splash of lemon, tartar sauce or the southern favorite hot sauce.

Where-ever you are on the globe this dish will not remain on the table for long.
