Fried cabbage is growing in popularity, not only for it's soothing taste, but because of it's health benefits. Cabbage recipes, long praised for it's healthy dose of vitamins A, B,C and E, as well as the intestinal benefits of fiber to boot. It has been a favorite vegetable of mine, it adds a unique interest to any dish, especially chicken, turkey or fish. Cabbage is also one of the most inexpensive vegetables for the amount of edible parts (no steams or leaves to throw away), in addition to the vitamin content.

Cabbage is an easy vegetable to handle, prepare and cook. Meaning the leaves are sturdy, cleans easily and cooks quick. All you have to do is just cut the cabbage into four pieces (this makes it more bite sized) . Next you slice thin into a shredded thickness. Now it is ready for the frying pan. With a small teaspoon of olive oil, butter, margarine or cooking spray in a large skillet or frying pan, you're ready to go.

Nonstick Frying Pan - How to Get the Most For Your Money When Buying Your Favorite Frying Pan

When you buy that nonstick frying pan, it is important to know that price is not always the best indicator of value. In this article you can learn about three brands that are great values in their respective price range.

WearEver - A Name Almost Everyone Remembers

Pan Fried Chicken

WearEver has been around FOR ever and it's still hanging in there with ever improved products. The WearEver Freedom 12-inch nonstick frying pan is a very nice size and lives up to its WearEver name. Most people aren't particularly kind to their WearEver pans because they are lower priced.

But, you know what? After a year or so, you will be amazed at the great condition that pan is still in. The handle is sturdy and it's just heavy enough to feel good in your hand. A real low priced value for the money and probably why WearEver is still wearing well.

Cuisinart - The Chef's Classic

Cuisinart cookware is very impressive and it holds a special place in many kitchens. One of this company's claims to fame is its exceptional use of hard-anodized aluminum. This is a medium priced cookware that is even available in a variety of decorative colors.

The Cuisinart skillet's nonstick coating is a breeze to cook with. Great for eggs, sauteing vegetables or even a hamburger; it performs like a champ. This pan cleans up easy and both the inside and outside stands up very well over time. In the medium price range and with a limited lifetime warranty, the Cuisinart offers a lot for the money.

All Clad - A Top Drawer Nonstick Product

If you know anything about cookware, you've heard of All Clad. They have etched a reputation for the standard in beautiful, long lasting cookware. Perhaps All Clad was the first brand you ever splurged on to bring home a highly touted frying pan.

Their ability to perfectly laminate shiny stainless steel over aluminum produces a very high performance product; one that assure even heat over the cooking surface. Unless you are willing to shell out for copper, All Clad Stainless is near the top of the line.

So when choosing your nonstick frying pan, you definitely have a choice. To get the most for your money, I think you will do well to remember these three examples of value for the price.

Ivory Coast Fried Plantains in Chile and Red Palm Oil Sauce - Spicy Favorite of West African Cooking

In small roadside restaurants in the Ivory Coast of West Africa, a dish called aloco is very popular. Plantains are fried in a hot pan of red palm oil and seasoned with onions, tomatoes, and hot chiles. It is usually then served with grilled fish.

Try to find red palm oil (either in an international grocery or market, or online) for this fried plantains recipe. Red palm oil is what makes West Africa food taste West African. But if that is not possible, you can use peanut oil. It will not have the authentic flavor or color, but will still be very tasty.

Pan Fried Chicken

The plantains needed for this recipe must be ripe, with their skins being nearly black in color. You can buy unripe plantains and leave them out. They will be black in about a week, so plan ahead when cooking this dish.

Ingredients:

1 cup red palm oil (or 1 cup peanut oil mixed with red paprika)

3 ripe plantains, peeled and sliced 1/2-inch thick

Salt to taste

2 large ripe tomatoes (about 1 pound), peeled, seeded, and chopped

1 medium onion, chopped

3 fresh red cherry chiles, or 2 habanero chiles, chopped fine

1 tablespoon white vinegar

Directions:

In a large skillet, heat the red palm oil over medium-high heat until almost smoking. Salt the plantain slices and fry in 2 or 3 batches (do not overcrowd the pan) until a golden brown color on both sides (about 4 to 5 minutes total per batch). Remove from the oil and place on paper towels for draining.

Add the tomatoes, onion, and chile peppers to the skillet with the oil you used to cook the plantains, and bring to a gentle boil. Reduce the heat to low and simmer until the sauce is thick and chunky, or about 50 minutes, stirring frequently. Stir in the vinegar.

Arrange the fried plantains on a serving platter and pour the sauce over them. Serve immediately. This plantains recipe makes 4 to 6 servings.
