Chicken fingers are a fun and exciting addition to any family cookout or social event. The majority of Americans are constantly on the go with work and other daily activities not to mention if you have children we all know how difficult it can be to just sit down and take a breather. After that long day of dropping the kids off at school, going to work, hitting the gym, picking the kids up from practice, and finally making it home, the last thing we feel like doing is cooking a healthy meal. Have no fear, easy chicken fingers recipes are here and they fun, easy, and kid-friendly.

Healthy cooking is essential in today's fast paced world. In the United States obesity has now reached epidemic proportions. Statistics don't lie; 58 million Americans are now overweight. To add to this alarming statistic, 40 million are obese and 3 million are morbidly obese. Eight out of ten people over the age of 25 are overweight. Since 1990, we have seen a 76% increase in Type II diabetes in adults 30-40 years old. Hello people!! These stats are down right scary. Experts all agree that proper diet and exercise are the key to fighting and preventing this wide spread epidemic that is effecting millions of Americans. No matter what your weight is or your children's, starting to practice healthy eating habits is a must.

Here are a few tips on getting started:

Drink plenty of water

Stay away from soda

Increase your fiber intake

Avoid fried foods

Heart healthy kid friendly recipes are easily available and can be prepared in no time. Chicken fingers are a quick easy meal. Keep in mind that if you are looking to stay healthy it's a good idea to avoid boxed, frozen or deep fried chicken. With such a large number of overweight people, thankfully we have a demand for healthy recipes. Here are a few healthy party snacks that will make the whole family happy.

Ingredients:

1 pound of boneless skinless chicken breast

1 ½ tablespoon of Dijon mustard

1 ½ tablespoon of frozen orange juice concentrate

1 ½ tablespoon of honey

1 teaspoon of sesame oil

½ teaspoon of ground pepper

¼ teaspoon of salt

Cut chicken crosswise into ¾-inch-wide strips. Whisk mustard, orange juice concentrate, honey, sesame oil and pepper in a medium bowl until smooth. Add the chicken and toss and combine. Cover and marinate in the refrigerator for 15 minutes. Prepare grill or preheat the broiler. Oil the grill rack or coat a pan with cooking spray. Remove the chicken strips from the marinade, discarding remaining marinade. Grill or broil the chicken until no longer pink in the center, 2 to 3 minutes per side. Season with salt and serve.

Finger Lickin Chicken Recipe!

Fried foods are full of calories and in most cases unhealthy trans fat. You do want to avoid trans fats for numerous reasons. To satisfy our cravings for fried foods, try different coatings such as the recipe below and bake your chicken rather than frying. It is amazing how many calories you can save with baking or roasting rather than frying.

When choosing chicken, it is best to use the white meat rather than the dark. Removing the skin is a must. The breading you use will compensate for the skin. Stay away from salt. Use other spices on your foods. If you are roasting chicken or turkey, remove the skin after roasting to keep the juices in. Do not be tempted to eat the skin once it has been removed. It belongs in the garbage.

Pan Fried Chicken

Bake extra chicken breasts for sandwiches for the following day. You will not only save money but you will have a nutritious lunch rather than a "fast food" lunch. When baking your chicken, use light cooking spray rather than oil or butter.

Finger Lickin' Crispy Chicken:

                1 cup wheat flour

                ½ cup cornmeal

                1 ½ teaspoons cayenne

                1 ½ teaspoons poultry seasoning

                ¾ teaspoon white pepper

                ¾ teaspoon black pepper

                ¾ teaspoon garlic powder

                ¾ teaspoon onion powder

                ½ teaspoon cumin

                1 cup buttermilk

                6 chicken breasts

Combine first 9 ingredients in a large baggie. Shake until well mixed.

Place chicken in a bowl and add the buttermilk. Soak for 1 hour. Turn occasionally.

Drain chicken and place in the bag. Shake until well coasted. Spray pan with a cooking spray. Arrange chicken breasts on baking sheet. Bake at 450 degrees for 35 minutes. Turn after 20 minutes.

Serve with a salad and vegetables. Enjoy!

Finger Lickin' Fried Chicken

1 1 tbsp paprika
1 tbsp old bay seasoning
1 tbsp black pepper
2 eggs
(optional) 1/4 tsp herbs de provence
1 tbsp lawry's seasoned salt
1/8 tsp cayenne pepper
2 cups plus 2 tbsp all purpose flour
canola or vegetable oil for frying

I believe in using a deep, heavy pot to do all of my frying. This is better than a cast iron skillet or a deep fryer any day. Start to heat the oil, fill the pot halfway with the oil, that way your chicken will float above the oil and will not stick.

The next thing you need to do is to wash off your chicken pieces. I know there are people that like using vinegar others like lemon juice, others like water. Do what is best for you, and rinse the chicken off. Now we are ready to season the chicken. Poke holes into the chicken with a fork or a knife, this is basically for the larger, thicker pieces like the breast meat,doing this ensures even cooking all the way through. The worst thing you could see is undercooked, bloody chicken. Now its time for the next step and this is the egg batter. This is the coating that will stick on the chicken and make it fry up nice and crispy.

Put the eggs in a small separate bowl then add the 2 tbsp of flour. Mix it up and take care to smooth out the lumps until it is like a paste. Pour this egg batter into the bowl with the seasoned chicken and toss to coat evenly with batter. Place the 2 remaining cups- of flour into the Ziploc bag and put in a few pieces of chicken at a time, and shake it baby. Drop the chicken into the hot oil and wait for the chicken to turn golden and the juices should run clear. Enjoy!




P.s. You will find the oil is hot if you can put a drop of water in the pan and the oil will dance, but be careful, too much water will make the oil pop on you. The pan should be on a medium flame while frying.
