There would have to be more recipe variations for fried chicken than for any other type of chicken cooking method.

How To Cook A Tender Juicy Steak

You invest a lot of time and money into the steaks for a special occasion and when dinner time comes, they are tough. What happened? How can you cook steaks as tender as your favorite restaurant?

The first step to cooking a good steak is to choose the right grade of steak. The top quality beef is graded USDA Prime and commands top prices. USDA Prime grade meats are sold to the restaurant industry and specialty markets and are not as likely to be found at your local grocery chain. The next grade of beef is USDA Choice. USDA Choice is tender, flavorful and only slightly lower in quality than USDA Prime. The meat is well marbled with fat and will be tender and juicy when properly prepared. USDA Choice makes up about 70% of all graded beef and is readily available in your supermarket. USDA Good graded beef is an acceptable grade of beef that has only minimal marbling of fat. It is leaner, but may not be as tender as USDA Prime or Choice.

Next, look at the color and texture of the meat. A good steak should be firm to the touch, moist, and bright in color. It should be well marbled with thin streaks of white fat throughout and a thin crust of steak on the outside. In our fat conscious society, we tend to look for lean cuts of meat, but the thin streaks of white fat marbled throughout the meat are the key to a tender juicy steak.

The most tender and juicy steaks come from the sirloin, the short loin, and the rib. These steaks include the sirloin steaks, porterhouse steaks, t-bone steaks, rib steaks, delmonico steaks, and the filet mignons. Steaks containing bone will weigh more than those without, but the bone adds flavor to the steak.

Aging is a desirable process that intensifies the flavors and makes the meat more tender. Aged steaks are more expensive and usually only found in high end supermarkets and specialty markets. An aged steak is recognizable by its darker color.

Once you have purchased your steak, you can further increase the tenderness and juiciness by marinating it. Try a marinade made of ½ cup each good wine and olive oil mixed 2 Tablespoons of lemon juice or herb vinegar. Add any seasonings that you like such as garlic, freshly ground pepper, onion, or herbs. Place the steak in a ziplock bag, pour in enough marinade to just cover it, and refrigerate overnight. Marinating a steak like this will add flavor and tenderness. If you routinely store steak in the freezer before cooking, try pouring the marinade over the steak before freezing. The steak will marinate when thawing and be ready to cook.

There are meat tenderizers available to sprinkle onto your steak, and they certainly do tenderize the meat; however, meat tenderizers can sometimes over tenderize the meat, changing the texture of the meat into mush. If you should choose to go this route, do it carefully.

When ready to cook, slash through the outside fat layer on the steak in a few places to prevent curling, but do not cut into the meat. The more tender steak cuts can be broiled, grilled, or pan fried. Less tender cuts should be pan fried or slow braised. Steak should never be cooked in liquid. When pan broiling, use a very heavy skillet such as an iron skillet or griddle and heat the pan before adding the meat. The heavy metal will hold the heat for proper heat distribution and not cool down when the steak is added. A hot pan will quickly sear the outside, trapping the moisture inside.

When cooking, try to turn the steak only once. Cook the meat until browned on one side and half done, then turn and finish the other side. Turning too often will stew the meat rather than searing it and produce a less juicy steak. When the steak is done, remove from the pan and allow to rest for a few minutes before serving.

While the meat rests you can make a sauce with the pan drippings if desired. Use your favorite sauce, or fry mushrooms and onions in the pan. When nearly done, add a tablespoon each of butter and flour and cook until lightly browned. Add a splash of wine and loosen any bits that may be stuck to the bottom of the pan. Allow to cook until thick, taste and adjust seasonings, and serve over the steak. Enjoy!

Cooking Tips - Pan Frying Chicken

If you are new to cooking chicken or to the pan frying method, you may feel hesitant to try making a pan fried dinner without assistance. Perhaps you have already given it a try but it didn't turn out how you expected. There are a few common mistakes that pan frying novices make, but these are easily remedied with a few simple cooking tips. Knowing these hints to pan frying will help you cook great tasting chicken every time.

Tip #1: Don't turn the stove on high. When pan frying chicken, many people burn the outside breading while the inside remains undercooked. If you've had this problem in the past, the temperature on your stove is too high. Try pouring your oil into the pan and starting with a medium heat. The oil should be heated and should shimmer, but should not smoke. A medium heat around 350 degrees F will allow the chicken to cook longer, heating the inside completely while achieving a golden brown crust.

Tip #2: Pound the chicken to an even thickness before frying. Another common problem is uneven cooking throughout the chicken. With chicken breasts, part of the cut is usually thicker than the other, which causes one end to cook faster and possibly overcook and become dry. To avoid this, pound the thicker part of the chicken so that the thickness is even with the thinner part of the cut. This will ensure that the chicken cooks evenly and remains juicy throughout.

Tip #3: Keep the chicken dry before breading. When you are ready to batter and bread the chicken, first dab your chicken with a paper towel. Removing the excess moisture allows your batter (usually egg) to adhere to the chicken better. When you are ready to bread the chicken, let the excess batter drain from the chicken. Too much egg could cause the breading to fall off in the pan, so allow the egg to just thinly coat the chicken before dipping it in the breading.

Tip #4: Turn the chicken as little as possible. Each time you turn your chicken from one side to the other, you risk disturbing the breading. This could cause the breading on your nicely coated chicken to fall off in the pan. Turning also increases the time it takes for the chicken to cook completely. Turn your chicken at most two times when pan frying to avoid these common problems. If you find yourself turning the chicken more than a couple of times to keep it from burning, your stove temperature is likely too hot. Check the temperature of your oil with a thermometer and adjust it to 350 degrees F if necessary.

Tip #5: Keep space between your chicken. Whenever pan frying chicken, always keep at least an inch of space between the pieces in the pan. If the chicken is crowded, the oil will take longer to heat and may result in soggy, undercooked chicken. The breading on the chicken could also stick together if pieces are touching. Spread your chicken throughout the pan so that oil can heat and cook your chicken from all directions.

Children can make Christmas plates

Most children enjoy creating, be it art, stories, or cooked. Christmas is a time of year to provide children, sweets and snacks to guests or to give. Here are some simple recipes to start with your child.

1. Peanut Butter Crunch

1 stick of butter
1 cup peanut butter
1 pound box powdered sugar
1 large box of crispy corn cereal squares
12 oz package of milk chocolate chips

Melt butter, peanut butter,Chips & chocolate in a bowl in the microwave with high until melted and blended. Empty the box of cereal in a large bowl and pour over top of chocolate mixture and coat well. Pour glaze over top and stir until all pieces are coated with sugar.

Shop 2 large zippered bag in the refrigerator.

S'more Balls

16 g bag of marshmallows
16 oz bag chocolate chips
16 oz package of crackers
Toothpick

CrushGraham crackers, to almost a powder and put into a saucepan. Melt the chocolate and stir often smooth. Stick a toothpick in one of marshmallows and dip them in chocolate around the path. Then dive into the cookie crumbs on the half. Dry wax paper.

Stir in white chocolate

10 oz of pretzels Mini Twist
5 cups toasted oat cereal
5 cups crispy corn cereal squares
2 cups salted peanuts
Candy Coated 14 oz milkChocolate chip
11 oz white chocolate chips
3 tablespoons vegetable oil

Line 3 baking pan with parchment paper or parchment paper. In a large bowl, add mini pretzels, toasted oat cereal, crispy corn cereal squares, salted peanuts and chocolate pieces coated with sugar. In a microwave safe bowl, chips and heat the oil over medium-high for 2 minutes, stirring once. Above the microwave for 10 seconds, until smooth. Pour the cereal mixture and mix well. Chicken green curry and coconut milk

Last week, I had the chance to put one of my friends at a Thai restaurant in the center. He heard a lot of Thai food, but never tried before. In fact, it would be happy to come to the Thai restaurant many times, but did not know what to eat. He was so happy that day because I went with him to the restaurant. I ordered Thai court to try him. He loved everyone, but what I liked best was the chicken with green curry and coconut milk. Easy Oven Fried Chicken Recipes

Oven Fried Chicken recipes are very easy to do. I also used the lazy "and" Shake and bake I found in the pantry instead of crackers. It 's fast, easy and best of all great, tasted. It 'is also suitable for busy mothers.

Oven fried chicken recipe # 1

Ingredients

4 chicken breasts boneless and skinless

1 stick margarine

1 sleeve saltine crackers - crushed

2 cups flour

1 tablespoon kosher salt

1 tablespoon freshly ground black pepper

Place chicken in a large bowl with butter on them.Cover with plastic wrap and refrigerator overnight.

Preheat oven to 350 degrees F.

Mix flour, salt and pepper in a large bowl. Remove chicken from buttermilk and coat each piece thoroughly with flour mixture. Pour the oil in a large heavy bottomed pan to a depth of 1 inch and heat to 360 degrees on the thermometer.

04:01 cup milk

1 cup seasoned bread crumbs

04:01 cup butter or margarine, melted
