Fried foods are full of calories and in most cases unhealthy trans fat. You do want to avoid trans fats for numerous reasons. To satisfy our cravings for fried foods, try different coatings such as the recipe below and bake your chicken rather than frying. It is amazing how many calories you can save with baking or roasting rather than frying.
When choosing chicken, it is best to use the white meat rather than the dark. Removing the skin is a must. The breading you use will compensate for the skin. Stay away from salt. Use other spices on your foods. If you are roasting chicken or turkey, remove the skin after roasting to keep the juices in. Do not be tempted to eat the skin once it has been removed. It belongs in the garbage.
Pan Fried Chicken
Bake extra chicken breasts for sandwiches for the following day. You will not only save money but you will have a nutritious lunch rather than a "fast food" lunch. When baking your chicken, use light cooking spray rather than oil or butter.
Finger Lickin' Crispy Chicken:
1 cup wheat flour
½ cup cornmeal
1 ½ teaspoons cayenne
1 ½ teaspoons poultry seasoning
¾ teaspoon white pepper
¾ teaspoon black pepper
¾ teaspoon garlic powder
¾ teaspoon onion powder
½ teaspoon cumin
1 cup buttermilk
6 chicken breasts
Combine first 9 ingredients in a large baggie. Shake until well mixed.
Place chicken in a bowl and add the buttermilk. Soak for 1 hour. Turn occasionally.
Drain chicken and place in the bag. Shake until well coasted. Spray pan with a cooking spray. Arrange chicken breasts on baking sheet. Bake at 450 degrees for 35 minutes. Turn after 20 minutes.
Serve with a salad and vegetables. Enjoy!
