Pan Fried Chicken

8 pieces of chicken washed and drained
1 tablespoon salt
1 teaspoon black pepper
1 large egg
1/2 cup evaporated milk
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon ground sage
1 tablespoon Mrs Dash Original Seasoning
2 cups all-purpose flour
1 quart vegetable oil
large dutch oven or heavy sauce pan for frying

Sprinkle chicken with salt and pepper and place in a shallow baking dish. Sprinkle lightly with 1/2 cup of flour.

In a bowl beat egg well with a fork, add milk and continue to beat until well mixed. Pour egg mixture over chicken and let rest for about five minutes.

In a large bowl combine flour, paprika, garlic powder, Mrs. Dash Original Seasoning, sage and flour. Coat chicken well, one piece at a time and place on a wire rack. Leave on rack for about fifteen minutes. This time will allow seasonings and flour to soak into chicken and there will not be excess flour in the bottom of the frying pan.

Heat oil in dutch oven or heavy sauce pan to 350 degrees or determine that oil is hot by your own method. Fry in batches of three pieces for ten to twelve minutes. When done chicken should be golden brown and crispy on the outside and moist and well done on the inside. Drain on paper towels. Serves five hungry people.
