Make your own battered chicken in just a few easy steps.

What you will need: 2 med mixing bowls 1 med frying pan

Ingredients: skin less bone less chicken breast, 1 cup of cooking oil, 2 cups self-rising flour, 1 cup of corn meal, 2 teaspoons of table salt, 2 teaspoons of ground black pepper, 2 scrabbled eggs uncooked

Instructions:

First scramble your two eggs (and you may need more depending on how much chicken you are cooking). Place your skin less boneless chicken breast in the egg to soak for a few minutes. In a isolate mixing bowl you are going to mix all the dry ingredients. So take the 2 cups of self-rising flour, 1 cup of corn meal, 2 teaspoons of salt, and 2 teaspoons of black ground pepper and mix well.

Go ahead put your frying pan over the heat about med-hi, while you batter your chicken.

Next, take your chicken that has been soaking in the egg and place it one piece at a time in the dry batter you just made. When the oil gets hot, take the pieces of chicken out of the batter and place into the frying pan.

You want to brown them on one side and then turn them over to brown on the other side. When it is brown on both sides. Cover the frying pan and let cook for about 10 min. Check the chicken to see if it is done. The chicken will be firm to the touch. If it is still soft it need to cook a diminutive longer.
