Chicken Enchilada Recipes - Easy & Quick To Prepare!

These chicken enchilada recipes are easy, quick and delicious. Just check these out and I'm sure you'll be amazingly surprised.

So put your hat on and get ready for some quick easy chicken enchilada recipes:

>> Chicken Enchiladas

2 pounds chopped cooked chicken (up to 3 lbs)

1 4.5 oz can chopped mild green chilies

1 onion - chopped

4 ounces shredded Monterey jack cheese

1 4 oz can chopped black olives

8 corn tortillas

1/2 stick butter or margarine

1/2 cup chili powder

1/3 cup flour

1/2 teaspoon garlic salt

1/4 te ground cumin

1/4 teaspoon crushed oregano

3 15 oz cans chicken broth

1 12 oz can tomato sauce

Mexican Gravy:

Melt margarine in saucepan. In aq bowl, mix together dry ingredients. Slowly add dry ingredients to margarine, stirring constantly. Mixture will become crumbly. Slowly add chicken broth to margarine mixture, stirring constantly. Stir into tomato sauce.

Enchiladas:

In mixing bow, stir together chicken, chilies, onion and 1 cup of Mexican gravy. In Crock-Pot, place foil handles (see directions below). Dip tortilla in Mexican gravy and lay in Crock-Pot. Spread about 3 tablespoons chicken filling over tortilla, and sprinkle with cheese and olives. Continue layering process until the top of Crock-Pot has been reached. Final layer should be cheese and olive layer. Pour any excess gravy over top of tortilla stack. Cook on Low 4 to 6 hours or on High for 1 1/2 to 2 1/2 hours.

Foil Handles:

Tear off three 18 x 2-inch strips of heavy foil or use regular foil flooded to double thickness. Criss-cross the foil strips in a spoke design and place in Crock-Pot to make lifting of tortilla stack easier.

3 Chicken breast halves

16 oz Can tomatoes, chopped

10 oz Can cream of chicken soup

4 oz Can chopped green chilies

1 c Chopped onion or onion salt

2 c Shredded cheddar cheese

1 t Ground cumin

1/2 t Garlic powder

12 Corn tortillas

Cover chicken with water and simmer for 30 minutes. Cool, bone, and cut into strips, set aside. Mix tomatoes, soup, chilies, cumin, and garlic powder. Dip tortillas into broth left from boiling chicken, place
one on a plate, add 2 Tb. of mixture and 1 Tb of cheese. Roll up and place seam side down in baking pan. After all are filled and rolled, Pour remaining sauce evenly over enchiladas and sprinkle with
remaining cheese. Bake at 350 until cheese is melted (about 20 minutes).

Boneless Chicken Recipes - Easy & Quick To Prepare!

Pan Fried Chicken

>> Honey Only Chicken Muffins

1 c Unbleached flour

1 c Cornmeal

1 tb Baking powder

1 tb Mustard - dry

1/2 ts Baking soda

1/2 ts Salt

2 c Skinless boneless chicken Breast -- cooked/chopped

1 c Buttermilk at room Temperature

1/4 c Applesauce at room Temperature

2 Egg whites whipped

2 tb Honey

Preheat oven at 350. Put in order 12 muffin tins with cooking spray and flour. In a mixing bowl, merge flour, cornmeal, baking powder, mustard, baking soda, and salt.

In a an additional one mixing bowl, merge chicken, buttermilk, applesauce, egg whites, and honey. Mix wet ingredients with dry ingredients just until moistened. Use an ice cream scoop to fill muffin tins 3/4 full. Bake for 20 minutes.

Here is an additional one recipe that is very tricky but very easy to prepare. Just check it out, you'll surely like it.

>> Boneless Chicken With Pimento's

1 c Cream of chicken soup

2 T Oil

1/2 cn Milk

1/2 c Grated cheese

2 T Mustard

1 Box of broccoli spears

2 T Chopped pimento

Brown boneless chicken in oil. Add soup, milk, grated cheese, mustard. Then add broccoli and pimento Cook 2 minutes. Serve over rice.

So here we go for some portuguese chicken recipes

Pan Fried Chicken

>> Poached Chicken Portuguese

1 bay leaf

1 c chopped onions

1 tb red wine vinegar

1/2 ts worcestershire sauce

1/2 ts cajun sunshine (hot pepper sauce)

1/4 ts pepper

10 to 15 strands saffron

2 garlic cloves, minced

2 tb olive oil

4 md tomatoes, peeled, seeded, chopped

4 skinless, boneless chicken breast halves

In a large skillet, heat oil over medium heat. Cook onions until translucent. Add garlic and hot sauce, cook about 1 minute. Add remaining ingredient, except chicken. Bring to a boil, cut heat, and simmer uncovered for 15 minutes. Place chicken on top of sauce, cover pan, and simmer 15 to 20 minutes, until chicken is cooked through. Serves 4.

>> Portuguese Fried Chicken With Chili Mustered

Emeril's dry rub

1 roasted red pepper peeled seeded and chopped

3 cl garlic crushed to a paste

3 tb olive oil salt and pepper

Chicken

1 fryer cut into 8 pieces

1/2 c mustard sauce

2 c flour

2 eggs lightly beaten oil for frying

For the dry rub: in a food processor, integrate the peppers, garlic and olive oil, puree until smooth. Season with salt and pepper.

For the chicken: wholly coat chicken pieces with the dry rub. Place on a baking sheet and allow to sit for 20 minutes.

Evenly coat each piece of chicken with the flour. Dip each piece in egg, removing any excess liquid. Turn back into flour, coating each side well. Fill a skillet with oil 2 inches high. When oil is hot, carefully lay the chicken in the oil, do not over crowd. Fry until golden brown, about 8-10 minutes. Turn the chicken over and continue cooking until done. Season with essence. Serve with mustard sauce.

Great Ways To Prepare and Cook Chicken

Chicken has become a very popular meat for families who are trying to adhere to a limited budget for food. Thighs with the back attached tend to cost the least per pound. The meat is inexpensive and full of good nutritional value.

The problem with chicken is after a few meals it all begins to taste the same. This article will give you a couple suggestions to help add variety to your meal plan. Chicken can be changed a few ways by cooking it differently.

Pan Fried Chicken

If you have been cooking the chicken as one piece, you could cut the meat into pieces. The easiest way to do this is to bend the meat at the joint to find where the thigh meets the leg. Use a very sharp knife and cut through the joint. The meat will at least look different.

Pan fried chicken can be a very tasty meal for those of you who are skilled at pan frying. Next time try adding waffles to your meal. Chicken and waffles work very well together. The savory of the coating and waffle work amazing well with the sweetness of the syrup. If you have a hard time putting this in your mind think of a chicken wrap with a sweet honey dressing.

To brine chicken is a super easy way to make your chicken juicy and tender. For each gallon of water add a cup of kosher salt, ½ cup of sugar and your favorite seasonings such as garlic and onion. Add your meat and let sit in the brine for up to 90 minutes. One tip I can give you is if you use plastic bags like I do, I would suggest double bagging. Cleaning up a mess because the bag had a leak is something you will only do once before you double bag to brine chicken.

Stuffed chicken can work wonders for a simple change. Thighs with leg attached usually come with the skin on. The skin can be used to make a variety of flavor changes to your meat. Next time you are using this kind of chicken see if you can slide your hand underneath the skin. You will be surprised at how easy this can be done. The pocket you have created between the skin and the meat can now be used to hold extra flavor. You can make basil pesto and rub the meat under the skin with it. Garlic and onion can be stuffed under the skin for more flavor. Whatever flavor you want can be stuffed under the skin, give it a try.

Roasted Chicken Recipes - Easy & Quick To Prepare!

>> Roasted Pecan Chicken

3/4 c Pecans, chopped

2 oz Creamy Goat Cheese

1 sm Clove Garlic, chopped

2 tb Olive Oil

1 1/2 ts Lemon Juice Pepper

3 1/2 lb Whole Broiler/Fryer Chicken

1 md Onion, sliced

1 Lemon, sliced

2/3 c Dry White Wine

2/3 c Chicken Broth

2/3 c Chicken Broth

1 tb Cornstarch

1 tb Cold Water

Cheese Spread: In a food processor combine pecans, goat cheese,
garlic, olive oil, lemon juice and pepper to taste. Process until
mixture forms a paste.

Roast Chicken: Preheat oven to 400F.Carefully loosen skin on chicken
breast by gently working fingers under the skin starting from both
the neck and body cavity ends. Be careful not to pierce or tear the
skin. Spread cheese mixture in an even layer in chicken breast
underneath the skin. Pull skin back oven cheese layer and secure with
wooden picks. Tie chicken legs together.

Arrange chicken in a 13x9x2 baking pan on a bed of onion and lemon slices. Add wine and 2/3 cup broth. Roast, uncovered, at 400F for 1 1/4 to 1 1/2 hours until thermometer inserted between leg and thigh registers 180øF. Baste occasionally with pan juices during baking. If necessary, tent with foil toward end of cooking to prevent over browning. Remove chicken from pan and keep warm. Strain pan juices, discarding lemon and onion slices. Skim fat from pan juices.

>> Chicken and Roasted Pepper Soup

Ingredients:

2 boneless skinless chicken breast halves (1/2 pound)

1 jar roasted red bell peppers -- drained (7-1/4 oz.)

1 medium onion -- chopped (1/2 cup)

2 cups chicken broth

2 tablespoons lime juice

1 tablespoon cilantro -- fresh chopped

1/2 teaspoon salt - optional

1/4 teaspoon pepper

2 cloves garlic -- finely chopped

1 cup jacamar -- peeled, cubed

Directions:

Set oven control to broil. Trim fat from chicken. Place chicken on
Rack in broiler pan. Broil with tops 4-6 inches from heat 15-20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut. Cut into 1/4 inch strips; set aside. Place peppers and onion in blender or food processor. Cover and blend
On medium speed until smooth.

Heat pepper mixture, broth, lime juice, cilantro, salt, pepper, and
Garlic to boiling in 2 quart saucepan; reduce heat. Simmer uncovered 15 minutes. Stir in chicken and jacamar; heat until hot.

Fast and Easy Ways to Prepare Baked Chicken

I decided to stop frying foods many years ago. I knew that fried foods were no all that good for us, but I really hated cleaning up the oil spatters from almost every surface in the kitchen. Chicken and french fries were readily available anyway, and without the mess or standing over a hot fryer. But as good and convenient as those take out options are, they are full of salt and can break the bank if you use them a lot. Here is a recipe for baked-fried chicken that my family really enjoys. I hope you will too.

BAKED CHICKEN FRY

Pan Fried Chicken

You will need

1 whole chicken, cut into pieces. You can save money by doing this yourself, or you can buy chicken that is already cut up. You may remove the skin if you wish 2 eggs beaten 1 teaspoon poultry seasoning 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon paprika or 1/2 teaspoon chili powder 1/2 to 3/4 cup flour 1/2 teaspoon lemon pepper 1/2 teaspoon salt 1 cup soft bread crumbs 1/4 cup olive oil or non-stick cooking spray 1 large zipper bag

1 large prepared baking pan with low sides, like a jelly roll pan. Low sides helps the chicken 'fry' evenly. If you don't have a pan with low sides, you could use a cookie sheet lined with a sheet of aluminum foil. Fold each side of the foil over a couple of times to form 1 inch sides. This will hold any fats or juices that accumulate during baking.

Set oven to 350 degrees. Prepare pan by spreading 1/4 cup olive oil across the entire bottom.

If the chicken is not already cut into pieces,cut it into 8 sections. Wash the chicken under cool running water. Pat dry on paper towels.

Combine the salt and lemon pepper,set aside. Mix the flour, seasonings, and spices together in the zipper bag. Pour the bread crumbs into a shallow bowl or dish.

Sprinkle the salt mixture over the chicken evenly. Coat the chicken in the beaten egg then drop into the flour mixture to coat.

Remove from the flour and dip again in the egg mixture. Now coat in the bread crumbs. Place bone sides down on the baking sheet.

Bake for 50 - 60 minutes or until golden brown. Turn once during cooking.

Serves 4-6

Great served with a salad, come great bread,and fresh fruit.

Here is another option that takes only a couple of minutes to prepare using readily available ingredients.

BAKED CHICKEN WITH STUFFING

You will need

1 whole chicken 1 package stuffing mix, I like the herb seasoned variety 1/4 cup each onion, celery, and carrots finely chopped 1 teaspoon olive oil 1/2 teaspoon garlic powder 1 teaspoon lemon pepper 1/2 teaspoon salt 1 cup hot water

Preheat the oven to 350 degrees.

Prepare the chicken by washing inside and out. Pat dry with a paper towel.

Rub the chicken with a mixture of the garlic, lemon pepper and salt. Be sure to include inside of the cavity.

Prepare the stuffing by cooking the onion,celery and carrots in one teaspoon butter or olive oil in a skillet over medium heat until softened, about 5 minutes. Combine the hot water with the onion mixture in the pan. Stir in the stuffing mix and stir until mixed and well moistened. You may add a little more water if needed.

Spoon the stuffing into the cavity of the chicken, packing lightly as it will expand while cooking. Also stuff the area of the neck cavity Tucking the flap of skin under to help hold the stuffing in.

Using butcher's twine or skewers secure the legs together with the tail portion up to partially cover the cavity. Tuck the wing tips under the back of the bird and place in a shallow roasting pan. Fill the pan with roughly chopped carrots and quartered washed potatoes. Sprinkle 1 medium onion, chopped, over the potatoes.

Bake 60 minutes or until juices run clear when the upper thigh is stabbed with a fork. You can also use a meat thermometer to test for internal temperature.

One more variation on baked chicken that my family really likes is

FRUITY CHICKEN BAKE

Follow directions for cleaning chicken as above.

Salt and pepper the bird.

Cut one apple, one small orange and one small onion in quarters. Insert into the cavities of the bird. Place in a roasting pan. Pour 1/2 cup orange juice concentrate over bird and bake on a bed of canned pineapple chunks at 350 degrees for about 60 minutes. You may want to pour 1/2 cup water over the bird about half way through the cooking to prevent burning. Serve with the cooked pineapple spooned over as a garnish.

Serves 4-6

Chicken Tender Recipes - Easy & Quick To Prepare!

These chicken tender recipes are easy, quick and delicious. Just check these out and I'm sure you'll be amazingly surprised.

So put your hat on and get ready for some quick easy chicken tender recipes:

>> Turkey or Chicken Tenders

1 1/4 lb Fresh turkey tenderloin Or boneless chicken breast

1 1/4 c Divided oat bran cereal

1 t Salt

1/2 ts Pepper

2 lg Egg whites

2 tb Lowfat evaporated milk

1 t Paprika

1/2 c Peanut oil

Cut turkey tenderloins or chicken breasts into 6 slices by cutting cross the turkey carefully with sharp knife. Pound tenders to 1/4 inch thickness. Slit around edges to keep from curling. Blend 1/2 cup of
the oat bran cereal with salt and pepper and coat tenders. Whip egg whites lightly with milk.

Blend remaining 3/4 cup oat bran with paprika. Dip meat into egg whites, then into oat bran paprika mixture. Place on baking rack and allow 5 minutes to dry. Heat peanut oil in large frying pan until hot. Brown tenders 2-3 pieces at a time for 3 minutes per side, or until crusty and brown. Drain well and serve with a low-fat dip.

>> Crispy Chicken Tenders

1 c All-purpose flour

1 ts Poultry seasoning

2/3 ts Paprika

1 ts Onion powder

1/2 ts Garlic powder

1/4 ts Salt ds Pepper

1 Egg

1 ts Milk

3/4 lb Chicken tenders Cooking oil

Combine dry ingredients in a plastic bag. In a bowl, lightly beat eggs
and milk. Dip chicken pieces in egg mixture and shake off excess. Shake a few chicken pieces in the bag at a time, coating well.

In a large skillet, heat 1/4 in. of oil over high heat; brown chicken on all sides. Reduce heat to medium and continue cooking for 10 minutes.

Garlic Chicken Recipes - Easy & Quick To Prepare!

These garlic chicken recipes are quick, easy and delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some garlic chicken recipes:

>> Garlic Chicken Pot

1 can chicken broth non fat

1 large onion sliced 1/4 thick

1/4 cup soy sauce, low sodium

2 heads garlic roasted

2 pounds chicken breasts without skin cubed

2 tablespoons soy sauce, low sodium

2 tablespoons cornstarch

7 ounce pkg chinese sausage (dynasty) sliced 1/4 thick

In a large bowl marinate chicken with the 2 tbs cornstarch, and 2 tbs soy sauce, put in frig for 30 minutes or longer. In a large non stick pan cook chicken, onion, sausage, covered until chicken is almost done.

Add chicken broth, 1/4 cup soy sauce, and garlic, mix well and cook till chicken is done. The broth should thicken a little.

I learned the following garlic chicken recipe from a friend. Check it out:

>> Broiled Chicken With Garlic

2 1/2 pounds chicken quartered

3/4 teaspoon powdered rosemary salt & pepper to taste chicken bouillon

6 cloves garlic

Rub chicken with 2 pressed garlic cloves, and rosemary. Also rub with salt and pepper. Let stand 30 minutes. Put chicken in broiler pan and coat top with bouillon. Sprinkle with 2 slivered garlic cloves. Add a little bouillon to pan. Broil turning when half done.

Coat top sides with bouillon and 2 more slivered garlic. Also rub with salt and pepper. Let stand 30 minutes. Put chicken in broiler pan and coat top with bouillon. Baste with pan drippings.
