To brine chicken is a super easy way to make your chicken juicy and tender. For each gallon of water add a cup of kosher salt, ½ cup of sugar and your favorite seasonings such as garlic and onion. Add your meat and let sit in the brine for up to 90 minutes. One tip I can give you is if you use plastic bags like I do, I would suggest double bagging. Cleaning up a mess because the bag had a leak is something you will only do once before you double bag to brine chicken.

Stuffed chicken can work wonders for a simple change. Thighs with leg attached usually come with the skin on. The skin can be used to make a variety of flavor changes to your meat. Next time you are using this kind of chicken see if you can slide your hand underneath the skin. You will be surprised at how easy this can be done. The pocket you have created between the skin and the meat can now be used to hold extra flavor. You can make basil pesto and rub the meat under the skin with it. Garlic and onion can be stuffed under the skin for more flavor. Whatever flavor you want can be stuffed under the skin, give it a try.
