Pork Tenderloin: The Perfect Choice for Dinner

Pork tenderloin is a center cut that can be broiled, roasted, pan-fried or grilled. It is a boneless, extremely lean cut of meat that is almost as low in fat as chicken breasts, and the lack of fat and bones leaves more usable meat per pound than its fatty, bone-in counterparts. Its mild flavor can be combined with any number of ingredients to create a wonderful meal.

Apples are commonly used in conjunction with pork. They can be cubed and placed in a roasting pan around the meat, or combined with cranberry and pecans and stuffed inside the tenderloin. An ample amount of apple cider works great in a crock pot when slow cooking the meat. Other fruits are frequently used with pork as well. Apricots, oranges, pineapples, mangoes, peaches and pears can all complement pork tenderloin. Marmalades, jams and jellies can be heated and used as a glaze on the meat to add a nice finishing touch. Strawberry sauce and compote are two surprisingly delicious additions to a pork meal.

Pan Fried Chicken

Pork tenderloin can take on a southern flair with the addition of a spicy chipotle rub or zesty barbecue sauce. Oriental food enthusiast can cut the meat into strips and stir fry with a teriyaki or sweet and sour sauce. Those fond of Italian fare can split the tenderloin, place a combination of cheeses inside and then bake in tomato sauce. Pork can be marinated in jerk sauce to add a hot and fiery Jamaican tang, or marinated in a sauce of lime juice, soy sauce, ginger, garlic and red pepper flakes to create a spicy Indonesian dish.

Cutting pork tenderloin into strips for a stir fry or pounding and slicing it into medallions will stretch the meat to feed more people. Pork must be fully cooked to avoid illness due to parasites or other harmful bacteria. The meat thermometer should read 170 degrees to ensure the meat is cooked through, or check for doneness by slicing the center of the tenderloin to view the color. Properly cooked meat will have an even, light gray hue. Be careful not to over cook the meat or it will become very dry and lose some of its flavor.

Pork tenderloin can be a bit more expensive than other cuts, but considering the fact that the entire cut is used and it is higher quality meat, it is well worth the cost. The health benefits from eating meat that is low in fat are another reason to spend the extra buck to buy a good cut of pork. What's For Dinner Tonight? 4th Edition

What's for dinner tonight? Chinese Sweet and Sour Pork over Fried Rice

Every year, on Christmas Eve, it's our family's tradition to have Chinese food. I don't know from where it came, but it's almost as exciting as our dinner on the next glorious day. In times of penny pinching (like this year), cooking at home is a must and to keep my family happy, the entrée's title must start with the word "Sweet". Grandma lets me take over this main course and I'm proud to say that she should.

Now the key to this meal is my sauce. I've worked on mastering my easy making, super simple sweet and sour sauce (Annie's Simple and Sweet 'n Sour Sauce) using pear preserves for quite some time. My family has agreed that I've finally figured it out and I'm so excited to share it with only you. Did I mention that no use of a boiling pot is involved for making this sauce?

Starting from the bottom of the plate to the top, here's how the was dish made:

Fried Rice
My fried rice might be a little simple, but it works for my family. You need:
1 cup of rice (= a little under 3 cups cooked)
2 eggs
½ cup frozen carrots
½ cup frozen peas
Soy sauce
3 pats butter
Spray Cooking Oil

Steam the rice.
Fry the eggs, scramble and finely chop them with the spatula until they're cooked through. Remove them from the pan and save for later.
In the same pan, spraying well with cooking oil and a little butter, add into the pan frozen carrots and peas. Keep stirring until they're cooked.
Next, scoot the vegetables aside, add another couple dabs of butter and gradually stir in the rice. When the rice begins to brown, mix in the vegetables and stir.
Following that, add the set aside, finely chopped scrambled eggs and top the flavor of the fried rice by stirring in soy sauce to taste.
Note that most people add a ½ of cup of mushrooms, onions, pork, chicken and/or other delicious treats to their fried rice, but I'm a simple girl and will let you experts "spice" it up for yourselves.

The next easy layer is the meat.

Fried Pork
Note that all of the ingredients are in 1's:
1 pound of boneless pork;
1 big teaspoon of oil;
1 bag of frozen stir fry vegetables (or cut up thinly 1 green bell pepper and 1 red sweet bell pepper).

Simmer the pork in the oil and carefully add the vegetables. Turn off the wok or pan, cover and let it steam to its doneness. Very simple, right?

Now, the piece de resistance!

[Annie's Simple and]Sweet 'n Sour Sauce
For the sauce you need 2 separate receptacles. I use a one cup measuring cup for the mixture, so it's easy to pour into the pear preserves bowl.

This mixture consists of ¼'s:
¼ cup of barbeque sauce;
¼ cup of apple cider vinegar;
¼ cup of water and
½ (two ¼'s) cup of pear preserves.

Mix everything -with the exception of the pear preserves- together. Slowly pour the mixture into the bowl of pear preserves stirring vigorously to create the texture or thickness you like for your sauce.

That's it! That's my secret that I will only share with you, my dear friends. The six of us eat this quickly and since they say you are hungry again an hour after eating Chinese food, I'll hurriedly plan my next issue of "What I'm having for dinner tonight?" for you immediately after I finish my last bite!

Easy and Healthy Dinner Recipes

It takes only twenty to thirty minutes to prepare a healthy dinner. Just make sure to plan the menu ahead and organize the ingredients in advance. Write down the menu for the week, and create a shopping list from there.

Many health-conscious people are fond of low carb dinners. With a little research, there are lots of sumptuous dinners that can be prepared. Healthy foods are after all equally delicious. Being healthy does not mean being boring.

Dinner is often considered the main meal of the day, when the family is gathered complete. Prepare healthy foods that everyone at the table will surely like. Dinner will be an enjoyable feast and a time to look forward to before the day ends.

Here are suggested recipes that take only 20 to 30 minutes to prepare:

Healthy Beef Skillet:

Ingredients:

1 Tbsp paprika
1lb top round beef
1 ½ tsp oregano
½ tsp chili powder
¼ tsp garlic powder
1/8 tsp red pepper
¼ tsp black pepper
1/8 tsp dry mustard
3 C shape onion slice
8 red-skinned potatoes
2 C beef broth
2 large carrots, chop into thin, 21/2-inch strips
2 large garlic

Instructions:

- Slice the beef thinly across the grain into long thin strips, measuring to about 1/8 inch long and 3 inches wide.
- Combine oregano, paprika, garlic powder, chili powder, dry mustard, red pepper and black pepper. Coat strips of meat with the spice mixture.
- Spray to a large non-stick skillet.
- Preheat the pan and place it on high heat.
- Add the meat.
- Cook and stir for about 5 minutes.
- Add onion, potatoes, garlic and broth and cook over medium heat for 20 minutes.
- Stir in carrots and lay green mustard. Cook until the carrots are tender, or for about 5 minutes.
- Serve the beef skillet in large serving bowl with crusty bread for dunking.

Oven Fried Chicken

Ingredients:

1 tablespoon Dijon mustard
½ cup butter milk
2 cloves garlic
1 tablespoon hot sauce
2 ½ to 3 pounds chicken legs trimmed and chop into drumsticks and thighs, skin removed
2 tablespoons sesame seeds
½ cup whole wheat flour
1 ½ teaspoon paprika
1 teaspoon baking powder
1 teaspoon dried thyme leaves
1/8 teaspoon salt
Olive oil cooking spray
Freshly ground pepper

Directions:

- Whisk mustard, buttermilk, hot sauce and garlic in a shallow glass dish until well blended.
- Add the sliced chicken and turn over to coat. Cover and marinate in the refrigerator for about 8 hours.
- Preheat the oven at 425 degrees Fahrenheit. Line the baking sheet with foil. Place a wire rack in the baking sheet and coat it with the cooking spray.
- Whisk sesame seeds, flour, thyme, paprika, salt, pepper, and baking powder in a small bowl. After that, place the flour mixture in a large sealable plastic bag or paper bag.
- Place one or two pieces of chicken at the paper bag and shake to coat.
- Spray the pieces of chicken with cooking spray.
- Bake the marinated chicken until it becomes golden brown (40 to 50 minutes)
- Serve in a large bowl.

Easy Dinner Recipes - Almond Chicken & Easy Chinese Stir Fry

Almond Chicken

This is a classic chicken dish that is made super easy by making it a one pot meal.

Ingredients:

8 boneless skinless chicken thighs
1/4 cup zesty Italian dressing
1 cup chicken broth
1 can green beans, drained
1 cup minute rice, uncooked
1/4 cup sliced almonds

Place chicken and dressing in a Ziploc bag. Toss to coat. For greater flavor, let chicken marinade for up to 2 hours.

In a large skillet, add chicken with dressing and cook over medium-high heat. Cook on each side for about 4 minutes or until browned.

Add broth to pan and bring to a boil. Cover and simmer for 10 minutes. Add beans and cook 5 minutes longer or until chicken is cooked completely.

Remove chicken from the skillet and keep warm. Add rice and almonds to the skillet. Remove from heat and cover. Let stand 5 minutes. Serve chicken over rice mixture.

Easy Chinese Stir-Fry

The dressing and hoisin sauce combine to make a delicious stir-fry sauce. Hoisin sauce is available in the Asian section of most major grocery stores.

Ingredients:

1 teaspoon vegetable oil
1 pound pork loin or chicken breast, cut into thin strips
3 cups sliced carrots
1/3 cup balsamic vinaigrette dressing
2 tablespoons hoisin sauce
2 green onions, thinly sliced
In a large skillet heat oil over medium-high heat. Add chicken or pork and carrots; cook for 5 minutes
In a small bowl combine dressing and hoisin sauce. Add to meat and carrots. Cook 7 minutes or until carrots are tender to the bite.

Add green onions and cook 1 minute longer. Serve immediately.

Makes 4 servings.

As chicken with lemon sauce for dinner and make great meals easy

I learned this simple law to prepare the chicken for dinner with my mother in Sweden. She says she is a very common food in Sweden. I like it because my whole family loves him and is easy to do.

In this recipe, you cook a whole chicken and use some 'chicken broth, lemon sauce. We usually enjoy with basmati rice and steamed broccoli. freezes and heats well and doing great school lunches.

4-6 servings Ingredients for youneed:

A whole chicken (fresh or thawed, but not frozen)

2-3 bay leaves

9-12 black peppercorns

1 teaspoon salt

3 tablespoons butter

1 / 3 cup flour

2-3 tablespoons lemon juice

To set: Fill a large pot (with water to cover, with a whole chicken) 2 / 3 of a water. Add water: bay leaf, pepper, salt andcut onion into quarters and remove the ends of the skin.

Bring to boiling water, then add the chicken. Bring to boil the water with foamy substance that causes the chicken to appear in a brown should be removed.

To Register: If there are containers for food, I mix the chicken, rice, broccoli and lemon juice together and the meal that freezes in size. My kids love it for lunch.
