Fried rice, especially the one made with eggs, is rich in fats and cholesterol and is a big 'NO' when it comes to including Chinese foods in your diet plan. If you are fond of rice, you can try brown rice that is healthier than fried rice.

6) Think twice before placing an order for dished that are described as "crispy" or "battered" in the food menu. Also watch out for dishes that include noodles, chow mien, and marinades.

7) Other bad choices would include Kung Pao chicken, crispy duck, dishes laden with rich sauces like Hoi sin, dumplings, and lo mien.

Some individuals will only eat chicken that has been fried because that is what they re used to or grew up with especially in the South. Not taking anyone away from the tasted and memories linked with fried chicken, the fact remains it is not as salutary as it should be. For a healthier meal along with chicken, there are ways to bake chicken so that the taste is wonderful and it remains a salutary meal choice. Pan Fried Chicken

When one chooses to find ways to bake chicken instead of frying it, the meal becomes much healthier and tastes much better. Baked chicken wins out over fried every time. Reheating the chicken for leftovers tastes even better than it did the first day. Make sure not to reheat any more than you will eat. Reheating can only be done one time and the leftovers will need to be discarded. You also only keep food for a maximum of three days after it is prepared.

Think Quick: Fried rice is such a great dish because it cooks up in minutes, so long as you plan ahead. Use a large open cooking surface like a wok or a griddle. Serves: 4

Ingredients:

- 2 tablespoons light oil
- 1 clove garlic, minced
- 3 small red or green chilies, minced
- 1 cup button mushrooms, halved
- 1 small onion, minced
- 2 cups cooked brown rice
- 2 ounces green beans, cut into 1/2-inch pieces
- 1 small sweet red or green pepper, sliced
- 1/2 teaspoon sugar substitute
- 3 tablespoons low sodium soy sauce
- 15 sweet basil leaves, sliced

Instructions:

1. Pour oil into a heated pan or wok.
2. When the oil is hot, add garlic and chilies
3. After about a minute, add the mushrooms, onion, rice, beans and pepper.
4. When the vegetables are softened and slightly crispy, add sugar, soy sauce and basil. Cook until vegetables reach desired doneness.

Healthy and Simple Food to Eat When Camping

One of the most fun times you can have while camping is cooking for the group. Cooking is generally done over a fire or on a grill. You should bring foods that are easy to store and keep fresh. You should include snacks for the trail as well as foods to prepare for each meal. Perishable items should be stored in a refrigerator or in a cooler on ice.
Breakfast
Start your day off right with a breakfast that will get you ready for a day of hiking or exploring. Slice up some mushrooms, onions, bacon and potatoes and grill in a skillet over the fire until done. Mix eggs with a little milk and pour over the mixture to heat until the eggs are fully cooked. This is a great skillet meal that is easy to prepare and clean up. Another easy meal to prepare is a breakfast taco. Cook some eggs and place inside a tortilla with cheese and picante sauce. If you feel a bit more adventurous, try a breakfast pizza using pre made crusts and eggs. You can cook the eggs any way you like them and add bacon, potatoes or sausage. Heat the pizza crusts over the fire and top with your egg mixture and cheese.
Lunch
Keep lunch simple and easy to prepare and clean up so you get back to your adventures. Sandwiches are a great lunchtime treat using easy to store and prepare foods. Sliced lunch meats with vegetables on bread make the perfect pick me up. For a hot side dish to accompany the sandwiches take some frozen French fries, chili and cheese sauce; combine them in foil, wrapping it tightly. Throw the package on the fire and cook until the fries are cooked through and then enjoy your gooey chili cheese fries.
Dinner
Dinner consisting of a hearty stew is a great option. Using canned vegetables, mix equal parts of your favorites in a heavy pot. These can include corn, peas and beans. Also add a can of chunk chicken and pre made barbecue pork. Add two cans of tomato sauce and two cans of chopped tomatoes and simmer slowly over an open fire for a filling stew. If you went fishing and were lucky enough to make a catch, fry it for dinner. After cleaning the fish, cut it into fillets. Combine one can of beer with two eggs until thoroughly mixed. To that add twelve ounces of flour, two teaspoons of baking powder and salt and pepper to taste. Dip the fish in cornstarch then the batter. Place it in hot oil and fry until the batter puffs. This is a great way to enjoy the efforts put forth after a day of fishing.
Trail Snacks
No camping trip is complete without snacks to prepare and bring while you are out on a nature hike. Walking and hiking is hard work so you should bring some foods that will help boost your energy. Popcorn popped over an open flame is a fun way to prepare the next day's snack. Trail mix is a traditional option and is limited to only your imagination. Use a combination of hearty ingredients with sweets. Combine granola, raisins, chocolate chips, M & M's, cereal, dried fruits and nuts. Use whatever combinations you like.
My favorite camping meals though, are made with pudgie pie makers (also called pie irons). They are made of cast iron or metal and have long handles. Our family uses pudgie pie makers to meal delicious treats for lunch and dinner. Bread is the staple ingredient in making a pudgie pie. My favorite is grilled cheese. To make one, butter two slices of bread. Place the buttered side down in the pudgie pie maker. This will prevent the bread from sticking. Place a cheese slice on top of each slice of bread. Close the pudgie pie maker. Place in the coals of your campfire. It will only take a few minutes for the pie to cook. Turn the pie maker after about a minute. Watch your sandwich closely. Depending on how hot your fire is, the sandwich will cook very quickly. Ham and tomato are also very good additions to your cheese sandwich.
Pizza pudgie pies are popular with our family too. Again, butter two slices of bread and place the buttered side down in the pudgie pie maker. Add your favorite pizza toppings (ours are canned pizza sauce, pepperoni, and mozzarella cheese). Close the pudgie pie maker and place in the coals of your campfire to cook. Be careful when removing pudgie pies from your pudgie pie maker. Both the pudgie pie maker and your sandwich will be very hot.
Another favorite type of pudgie pie that our family enjoys are dessert ones. Butter your two slices of bread and place the buttered sides down in the pudgie pie maker. Spoon in some of your favorite prepared pie filling (cherry or apple are our favorites). Cook in the fire and enjoy.
And of course, no camping trip is complete without making smores. They're also very easy to make. Start by roasting a marshmallow over your fire. Once your marshmallow is warm and gooey, stick it on top of a graham cracker and a piece of a chocolate bar, and then top with another graham cracker.
Cooking while camping can really be a lot of fun. Preparing foods should be easy and require little clean up and use few pots and pans. At the end of the night, though, no camping trip would be complete without toasting marshmallows. Cut some branches and skewer large marshmallows. Hold each stick over the flame until brown and toasty. It makes a great, gooey dessert and an ideal end to your day.

Easy and Healthy Dinner Recipes

It takes only twenty to thirty minutes to prepare a healthy dinner. Just make sure to plan the menu ahead and organize the ingredients in advance. Write down the menu for the week, and create a shopping list from there.

Many health-conscious people are fond of low carb dinners. With a little research, there are lots of sumptuous dinners that can be prepared. Healthy foods are after all equally delicious. Being healthy does not mean being boring.

Dinner is often considered the main meal of the day, when the family is gathered complete. Prepare healthy foods that everyone at the table will surely like. Dinner will be an enjoyable feast and a time to look forward to before the day ends.

Here are suggested recipes that take only 20 to 30 minutes to prepare:

Healthy Beef Skillet:

Ingredients:

1 Tbsp paprika
1lb top round beef
1 ½ tsp oregano
½ tsp chili powder
¼ tsp garlic powder
1/8 tsp red pepper
¼ tsp black pepper
1/8 tsp dry mustard
3 C shape onion slice
8 red-skinned potatoes
2 C beef broth
2 large carrots, chop into thin, 21/2-inch strips
2 large garlic

Instructions:

- Slice the beef thinly across the grain into long thin strips, measuring to about 1/8 inch long and 3 inches wide.
- Combine oregano, paprika, garlic powder, chili powder, dry mustard, red pepper and black pepper. Coat strips of meat with the spice mixture.
- Spray to a large non-stick skillet.
- Preheat the pan and place it on high heat.
- Add the meat.
- Cook and stir for about 5 minutes.
- Add onion, potatoes, garlic and broth and cook over medium heat for 20 minutes.
- Stir in carrots and lay green mustard. Cook until the carrots are tender, or for about 5 minutes.
- Serve the beef skillet in large serving bowl with crusty bread for dunking.

Oven Fried Chicken

Ingredients:

1 tablespoon Dijon mustard
½ cup butter milk
2 cloves garlic
1 tablespoon hot sauce
2 ½ to 3 pounds chicken legs trimmed and chop into drumsticks and thighs, skin removed
2 tablespoons sesame seeds
½ cup whole wheat flour
1 ½ teaspoon paprika
1 teaspoon baking powder
1 teaspoon dried thyme leaves
1/8 teaspoon salt
Olive oil cooking spray
Freshly ground pepper

Directions:

- Whisk mustard, buttermilk, hot sauce and garlic in a shallow glass dish until well blended.
- Add the sliced chicken and turn over to coat. Cover and marinate in the refrigerator for about 8 hours.
- Preheat the oven at 425 degrees Fahrenheit. Line the baking sheet with foil. Place a wire rack in the baking sheet and coat it with the cooking spray.
- Whisk sesame seeds, flour, thyme, paprika, salt, pepper, and baking powder in a small bowl. After that, place the flour mixture in a large sealable plastic bag or paper bag.
- Place one or two pieces of chicken at the paper bag and shake to coat.
- Spray the pieces of chicken with cooking spray.
- Bake the marinated chicken until it becomes golden brown (40 to 50 minutes)
- Serve in a large bowl.

Easy Chicken Recipes - Healthy Crispy Oven-Fried Chicken

Why stand at the stove and be spattered with grease when you can achieve that same chicken taste by using your oven? This easy chicken recipe will take away all that mess and fuss. This easy recipe also is quite healthy due to the addition of cornflakes and buttermilk. Our world is hectic and crazy. Most of the time, both mom and dad are working. This easy, healthy chicken recipe is the perfect way to have that special chicken dinner without much trouble.

Easy Healthy Crispy Oven-Fried Chicken

Pan Fried Chicken

Makes 6 Servings (Serving Size:1/2 Breast or 2 Small Drumsticks)

1/2 cup skim milk or buttermilk

1 teaspoon poultry seasoning

1 cup cornflakes, crumbled

1 1/2 tablespoons onion powder

1 1/2 tablespoons garlic powder

2 teaspoons black pepper

2 teaspoons dried hot pepper, crushed

1 teaspoon ground ginger

8 pieces chicken, skinless (4 breasts, 4 drumsticks)

1 teaspoon vegetable oil (use to grease baking pan)

a few shakes of paprika

1. Preheat oven to 350F.

2. Add 1/2 teaspoon of poultry seasoning to milk.

3. Combine all other spices with cornflake crumbs and place in a plastic bag.

4. Wash chicken and pat dry. Dip chicken into milk, shake to remove excess, then quickly shake in bag with seasoning and crumbs.

5. Refrigerate for 1 hour.

6. Remove from refrigerator and sprinkle lightly with paprika for color.

7. Evenly space chicken on greased baking pan.

8. Cover with aluminum foil and bake 40 minutes. Remove foil and continue baking for an additional 30 to 40 minutes or until the meat can be easily pulled away from the bone with a fork. The drumsticks may require less baking time than the breasts. crumbs will form a crispy "skin". (Do not turn chicken during baking).

This healthy quick dinner recipe will help solve tonight's dinner crisis and provide you with a winning entrée fit for a company meal. As a bonus, it can be halved or expanded to fit the number of servings needed and uses only one bowl and one baking dish, so cleanup is easy.

If you're a dark meat fan, you could also use chicken thighs and legs for this recipe, but you would need to adjust the cooking time accordingly.

Healthy Quick and Easy Orange Chicken Dinner 4 chicken breast halves, skinned and boned

2 tablespoons butter or margarine, melted

1/2 teaspoon paprika

1/4 cup finely chopped onion

1 teaspoon salt

1/4 teaspoon dried rosemary, crumbled

pinch black pepper

1 cup orange juice

grated rind of 1 orange


Preheat the oven to 350 degrees F.
Arrange the chicken breasts in a 13x9x2" baking dish
Drizzle the chicken with the melted butter and sprinkle with paprika.
Combine the remaining ingredients and pour over the chicken.
Bake uncovered for 15 minutes, until fork tender, basting occasionally with the pan juices.
Serving Suggestion: Serve with a wild rice pilaf and green beans or a salad.

Boneless Skinless Chicken Breast Recipes - Two Quick, Easy, and Healthy Recipes

A side dish of whole grain pasta and marinara sauce (marinara from a jar is fine) will add a great accoutrement to this dish. Garnish with grated Parmesan cheese.
