Top Chef Secrets - How to Make Savory Fried Chicken

One of the most popular foods in America is fried chicken. When most people want a delicious meal of fried chicken they run out to the local fried chicken fast food restaurant and grab a bucket. The one thing they probably do not realize is that they could easily prepare this enjoyable dish themselves, it is not that complicated or time consuming.

Ingredients:

1 Quart of buttermilk

2 Cups of buttermilk separate from the quart

2 Tablespoons of salt

2 Teaspoons of pepper

Hot sauce

8 pieces of chicken (usually a mixture of breasts, thighs, and legs

1 Tablespoon garlic powder

1 Tablespoon onion powder

1 Tablespoon paprika

4 Cups of flour

Peanut Oil

Other Items Needed;

2 Mixing Bowls

A Whisk

2 Large Dishes (for coating the chicken in flour)

Deep Cast Iron Skillet

Meat Thermometer

Oil Thermometer

Once you have assembled all the necessary ingredients you will need to get a large mixing bowl. In the bowl you will need to combine the one quart of buttermilk, the two tablespoons of salt, the 2 teaspoons of pepper, and your desired amount of hot sauce, if any. You could also add some of your own favorite spices if you would like. Make sure all these ingredients are thoroughly whisked together. Now, take you chicken pieces and put them in the bowl making sure to coat them with the mixture generously. Preferably you would want to let the chicken sit in the mixture for no less than four hours, but if you are constrained by time ten to twenty minutes would be ok.

Next, take the other two cups of buttermilk and pour into another bowl. Separately take your flour and mix it with the garlic powder, onion powder, paprika, and any of your other favorite spices. Take the flour mixture and separate it evenly into two large dishes. You will now need to take your chicken out of the mixture it was in and drain it and dry it lightly. Take the chicken pieces and roll them around in your first dish of the flour and spices. Once your piece it thoroughly covered in the flour take it and dip it in the bowl of buttermilk. Shake off any excess and put it in your second batch of flour, making sure to cover the whole piece with flour. Repeat this process for all the pieces of chicken.

You will now need a fairly deep cast iron skillet to begin frying the chicken. Fill the skillet to about three inches with your peanut oil. You will need to heat the oil to around 375º F. You will want to have a proper thermometer handy because you don't want the oil to be too hot or too cold. Take a few pieces of chicken and gently place them in the oil. Rotate them occasionally until they are golden brown on the outside and thoroughly cooked on the inside. Chicken should be cooked until its internal temperature is about 180º F, which should take around twenty five minutes of frying. Repeat this process for the remaining pieces of chicken. You now have delicious homemade chicken. Serve and enjoy!
