Bake practically 40-50 minutes until chicken is done. Half way straight through baking spoon oil from pan on chicken to brown properly.

Secrets to a Perfect Fried Chicken

A basket or a bucket of fried chicken is ideal for picnics and kiddie parties. It tastes good and so easy to eat with your hands, so using utensils is just an option. We are fond of buying a bunch at our favorite fast food stores and we often wonder how these pieces become so crunchy. We have tried a few attempts in the kitchen but to no avail. It still comes out so different from the ones we often buy. So how do they really do this?

There are a thousand and one ways to cook fried chicken, which features different ways of preparing it. The chicken recipes itself vary from the batter used, to the ingredients added, to the cooking time and to the cooking method applied. Some recipes would tell you to double-coat the chicken, or removing the skin before battering. Other recipes will use butter, bacon grease or oil to fry it. Numerous variations are made to improve the taste but the basics of frying a chicken are just simple: chickens are cut up in preferred sizes, rolling in it flour, putting it in a skillet with oil and fried until golden brown.

Secrets of Perfectly Moist Chicken Breast Recipes

Sometimes it is difficult to keep boneless chicken recipes moist. Either the breasts meat comes out dry or they are not cooked properly.

You have to be careful when making a chicken breast recipe and that applies to anything from easy chicken enchiladas to chicken stew. Chicken must be cooked to 165 degrees F in order to be safe to eat but a lot of people overcook the chicken and dried out chicken is not enjoyable to eat!

Pan Fried Chicken

There are various ways to cook boneless chicken recipes, including grilling, steaming, sauteing, deep frying and baking, but one of the best secrets for moist chicken breast recipes is to poach the chicken in a little liquid after sealing the outside. Not only does this cooking method add lots of flavor but it stops the chicken from drying out.

An Easy Recipe for Moist Chicken Breast

This recipe makes enough chicken for two people. A nonstick stainless steel skillet is best to use, if you have one. The amounts of broth, flour and olive oil are approximate and it depends on the size of the breasts and the size and shape of your skillet.

Serve this delicious poached chicken with mashed potatoes and fresh vegetables for a wholesome and delicious dinner. You can use any herbs you like, so feel free to substitute the rosemary and oregano for parsley, cilantro, thyme or even a pinch of mixed herbs.

You will need:

2 chicken breasts 1/2 pint chicken broth Salt and black pepper 1/2 cup all purpose flour 1 tablespoon olive oil 1 clove garlic, crushed 1 teaspoon lemon juice 1/2 onion, chopped 1/2 teaspoon dried rosemary 1/2 teaspoon dried oregano
How to make it:

Sprinkle salt and pepper over the chicken and then dredge them in flour, shaking off the excess. Preheat a skillet over a medium heat until it can evaporate droplets of water you drop into it. Pour a little olive oil into the pan. You could also use canola oil or any fat with a high smoke point. You should coat the bottom of the pan with oil but that is enough.

Add the chicken breasts to the hot pan and sear them for a couple of minutes until they are golden brown. Turn them over and sear the other side. If you are going to double this recipe, do two chicken breasts at a time. Crowding the skillet means you will not be able to brown all your chicken properly.

Turn the heat down to low, and then add chicken broth. It needs to come a third of the way up the chicken breast. If you add to much you will be boiling the chicken, which is not what you want. Add the onions, rosemary, oregano, garlic and lemon.

Cover the pan with a lid that fits tightly and cook the chicken breasts over a low heat until they are done. They are done when a meat thermometer reads 165 degrees F in the thickest part of the chicken breast. If you do not have a meat thermometer, cut into the chicken. It is done when it is white all the way through with no hint of pink in the middle.

Kentucky Fried Chicken Batter Recipe - The Secret's Only a Few Keystrokes Away!

I though it would be easy to find the Kentucky Fried Chicken batter recipe online, so I typed it into the search engine. Turns out, it wasn't that easy. Oh, I found lots of recipes, but I also found it hard to believe that any of them were authentic. Now, I'm pretty easy to fool. I'll look at a zirconia diamond and not know it's a fake, but when I saw some of the ingredients in these recipes, I was convinced they weren't the real thing.

I was always a fan of KFC, but I only decided to look for the recipe after years of trying to fry chicken and failing. Cooking was never my strong point, but in more recent years I have become more patient and therefore, a better cook. My increased confidence inspired me to conquer the art of frying chicken. You may think that I am being a bit dramatic, but then you've never had to eat my fried chicken. Believe me, my husband understands why I am was being so determined to find the best recipe possible.

As it sometimes happens with computer searches, I had to surf awhile, and page around through recipes and web sites before I came upon the actual Kentucky Fried Chicken batter recipe, but it was well worth it in the end. I finally found it, along with many others, in a recipe book that contains hundreds of authentic recipes from some of the most popular restaurants around. I gotta tell ya, I don't know how this book came about, but I sure wish that I found it years ago. Now when I say we're having fried chicken for dinner, my husband says, "great," instead of, " hey, let's order a pizza!"

Ingredients

* 4 chicken leg quarters * 3/4 cup flour * 1 tablespoon salt * 1 tablespoon pepper * 2 teaspoons msg * 1 1/2 teaspoons paprika

Directions

1. Preheat oven to 375 degrees Fahrenheit. 2. Cut chicken into 8 pieces(4 legs and 4 thighs. 3. In a zip lock bag mix all dry ingredients. 4. Wet chicken. 5. Put one or two pieces of chicken at a time into the bag and shake well. 6. Then put chicken pieces on an oiled pan. Use Canola or Peanut oil so your chicken will not stick. 7. Bake approximately 40-50 minutes until chicken is done. Half way through baking spoon oil from pan on chicken to brown properly.

Top Chef Secrets - How to Make Savory Fried Chicken

One of the most popular foods in America is fried chicken. When most people want a delicious meal of fried chicken they run out to the local fried chicken fast food restaurant and grab a bucket. The one thing they probably do not realize is that they could easily prepare this enjoyable dish themselves, it is not that complicated or time consuming.

Ingredients:

1 Quart of buttermilk

2 Cups of buttermilk separate from the quart

2 Tablespoons of salt

2 Teaspoons of pepper

Hot sauce

8 pieces of chicken (usually a mixture of breasts, thighs, and legs

1 Tablespoon garlic powder

1 Tablespoon onion powder

1 Tablespoon paprika

4 Cups of flour

Peanut Oil

Other Items Needed;

2 Mixing Bowls

A Whisk

2 Large Dishes (for coating the chicken in flour)

Deep Cast Iron Skillet

Meat Thermometer

Oil Thermometer

Once you have assembled all the necessary ingredients you will need to get a large mixing bowl. In the bowl you will need to combine the one quart of buttermilk, the two tablespoons of salt, the 2 teaspoons of pepper, and your desired amount of hot sauce, if any. You could also add some of your own favorite spices if you would like. Make sure all these ingredients are thoroughly whisked together. Now, take you chicken pieces and put them in the bowl making sure to coat them with the mixture generously. Preferably you would want to let the chicken sit in the mixture for no less than four hours, but if you are constrained by time ten to twenty minutes would be ok.

Next, take the other two cups of buttermilk and pour into another bowl. Separately take your flour and mix it with the garlic powder, onion powder, paprika, and any of your other favorite spices. Take the flour mixture and separate it evenly into two large dishes. You will now need to take your chicken out of the mixture it was in and drain it and dry it lightly. Take the chicken pieces and roll them around in your first dish of the flour and spices. Once your piece it thoroughly covered in the flour take it and dip it in the bowl of buttermilk. Shake off any excess and put it in your second batch of flour, making sure to cover the whole piece with flour. Repeat this process for all the pieces of chicken.

You will now need a fairly deep cast iron skillet to begin frying the chicken. Fill the skillet to about three inches with your peanut oil. You will need to heat the oil to around 375º F. You will want to have a proper thermometer handy because you don't want the oil to be too hot or too cold. Take a few pieces of chicken and gently place them in the oil. Rotate them occasionally until they are golden brown on the outside and thoroughly cooked on the inside. Chicken should be cooked until its internal temperature is about 180º F, which should take around twenty five minutes of frying. Repeat this process for the remaining pieces of chicken. You now have delicious homemade chicken. Serve and enjoy!

Chicken Biryani Recipe - Secrets of Making a Perfect Biryani

If I ask you, "which is your favorite Indian rice recipe"?, I am sure your topmost answer will be "a biryani". Even in biryanis the most liked of all is a chicken biryani.

So here is a recipe for you to make a perfect biryani.

Ingredients required

Ingredients for marinating the chicken

* 1 Kilo Chicken on the bone cut into 12-16 pieces
* 1 cup of curd
* 1/2 Teaspoon turmeric powder
* 1 Tablespoon of ginger garlic paste
* 1 Teaspoon of coriander powder
* a little salt

Mix all of the above ingredients and let the chicken marinate for 6-12 hours, more the better.

Herbs, spices and condiments used are as follows

* 8 cloves
* 1 Cinnamon stick
* 6 green Cardamoms
* 2 Bay leaves
* 1/2 Teaspoon shahi jeera (caraway seeds)
* a few pinches grated nutmeg and mace each
* 1 Teaspoon Coriander powder
* 1 Teaspoon red Chili powder (to taste)
* 5-6 Tablespoon of chopped fresh mint
* 2-3 chopped green Chilies
* 4-5 chopped Tomatoes
* a whole bunch of fresh coriander leaves

For fried onions

About 8-9 medium size onions

Other Ingredients
* 500 g good basmati rice
* Oil for deep frying and 3-4 tablespoon for cooking
* 1 Tablespoon of ginger garlic paste
* 1/2 cup of milk
* a few strands of Saffron (kesar)
* Desi ghee (clarified butter) about 6-7 Tablespoons
* Cashew nuts ( a few or as many as you want)
* Raisins and almonds are optional
* Salt to taste

Deep fry the onions
While the chicken is marinating, slice the onions very thin. You can use a food processor for this or a slicer. Now heat oil and fry these sliced onions in batches. The heat should be medium. Definitely not high, otherwise the onions will get burned.

Stir the onions continuously for uniform browning. When they become light brown, drain them on kitchen paper. Keep them aside. They will get nice crispy as they cool down.

Cook the Chicken

Take a deep, wide mouth vessel and heat 3-4 tablespoons of oil in it. In this add the bay leaves, cloves, cinnamon, cardamoms, little bit of shahi jeera and allow to crackle. Now add a tablespoon of ginger garlic paste and stir a little. Now tip out all the marinated chicken and the marinade. Cook on a high flame so that the water gets evaporated quickly. Add the chopped tomatoes, mint, green chilies, all dry powders(coriander, chili), and salt. Cook till the chicken is cooked and the gravy (masala) is not watery. Add one third of the fried onions. Mix well. Keep aside.

Parboil the rice

Boiling rice is one of the most important part of cooking a biryani. The rice needs to be parboiled. Meaning, it should be three fourth cooked. The rest of it gets cooked on dum (when we layer the chicken and rice, seal it and put on a very slow fire).

To boil the rice take a big deep wide mouth vessel, add lots of water (at least 10 times more than rice). Add ample salt (this is very important because the rice needs to be salty when cooked). Also add a cinnamon stick, a couple of green cardamoms, a few cloves and the rest of caraway seeds (shahi jeera), for flavoring the rice.

Now boil all this for a few minutes on a high flame (7 minutes or so). This is how to check if the rice is done. Without burning your fingers, take a few grains of rice (use a clean spoon to take some out of the boiling water), break a grain, if it breaks into 3 parts easily, your rice is done.

Strain the rice and spread it on a clean surface ( a tray or something), so that it cools faster. If you want to pick out the whole spices which you added, you can do that now. Or else just let them be.

Keep all these ready

Now that the rice and chicken are cooked. Fried onions are ready. You just need to get a few more things organized, so that the layering can be done.

* Chop the coriander leaves
* Boil the milk and add crushed saffron in it. Give it a stir.
* In desi ghee, fry the cashew nuts till golden brown. Also the almonds and raisins, if using. Keep aside.
* Keep some melted desi ghee aside.

Layering the biryani

Take a heavy bottom pan with a lid (non stick is best).

Take some melted ghee and grease the bottom of the pan with it. Then

* Put a layer of rice,
* Then a layer of chicken
* followed by a layer of fried onions
* then a layer of chopped coriander.

Repeat and finish off with the rice layer. Lastly, sprinkle the leftover fried onions (if any), cashews and other nuts. Pour the saffron milk on top. Also pour some desi ghee down the sides of the pan and some on top of the rice. It will trickle down with the heat.

Yep, you are done. Seal the lid by sticking it with some chapati dough or simply fix a big foil before placing the lid. The idea is to restrict the steam from escaping. Place this pot on a very slow flame. Ideally place this vessel on top of another flat pan or tawa, so that the bottom of the pan doesn't come in direct contact with the heat source.

Leave for one hour. When you open it, what you get is the magical, flavorsome and aromatic chicken biryani. Please dig in. Don't forget to prepare a riata while your biryani is cooking. Enjoy hot biryani with a cold raita.

And 'Healthy Sushi Secrets

Sushi was one of the most difficult to do without food, having decided to adopt a vegan diet. After all, my passion for sushi is one of the things that made me live in Japan first. And while Japan is known for the exclusive sushi restaurants, which costs $ 500 per person, even low-end sushi (as Kaiten or "belt" style) is fresh and inexpensive compared to other countries, makes it difficult to resist.

Recently, I had offers sayonara meat, eggs and dairy, IContinuation of Japanese carrier for sushi with friends and family. At first I ate the most varieties of vegetables, such as natto (fermented soybeans) and green onions, cucumbers, takuon (pickled radish), kampyo (dried gourd) and inarizushi (sesame tofu stuffed with sushi rice seeds and blacks).

As an omnivore, I have always considered not only Umai Sushi (delicious), but in good health than conventional convenience foods like sandwiches orBurger. But at some point it occurred to me that even without the fish, a restaurant or shop, sushi, was not particularly healthy for two reasons:

The first most important ingredient is sushi rice vinegar. Since going vegan, I was only eating foods made from whole grains away. I used to genmai (rice) at home for their nutritional benefits (three times the fiber, more vitamins and minerals) than white rice, and I could not agree to eat white riceSushi by a taste or a health point of view.

second sushi vinegar contains Katsuo Dashi (dried tuna). The other ingredients are used in sushi, such as cucumber, umeboshi (plum acid), and sauces are prepared with sushi vinegar and / or dashi. In fact, I recently discovered that the food sushi shops that do not contain powdered extract of fish is green tea!

I do not know why many people seem to have difficulty eating brown rice. Westerners eat or notwhile the Japanese, they like to eat genmai often say that mixed with white rice, seems to eat for its health benefits, rather than its flavor and texture, which actually prefer.

When I stopped eating at the sushi restaurant, I wanted to stay a vegetarian alternative, then we started Temaki zushi (hand-rolled sushi) genmai home with vinegar, nori (seaweed Laver) and various fittings such as the avocado flesh, Natto, Ume , slices of cucumber, etc.

IfThe time for special occasions, we fry the eggplant slices easily (Nasu), and eat sushi genmai well. Hot (Abura) and dipped in a little wasabi with soy sauce, it tastes as good as Otori (fatty tuna), UNI (sea urchin), Ikura (salmon roe) and other traditional delicacies of sushi ever done!

So if you think you can not begin to eat plant-based, it could never give up your favorite foods, think again! There are many delicious herbal alternatives ifafter the launch of the vegan way.
