Chicken Fried Steak - A Southern Tradition

Zac Brown did the song, and now you can enjoy them! Chicken Fried Steak is an all time American favorite and the biggest seller in restaurants from Nebraska to the Deep South. If done right they are delicious!

Chicken Fried Steak is commonly called a chicken fry. Do not confuse this with chicken, they are pure beef! The name comes from the coating on these delicious minute steaks.

Pan Fried Chicken

Purchase one ½ lb minute steak per person when serving these as the main course. They can be cut into strips and made for a snack as well.

½ lb minute steaks 2eggs Milk Saltine crackers, crushed into a variety of sizes. Not finely crushed Melted butter Cooking oil.Beat the eggs and about 1 cup milk in a bowl, set the minute steaks in this mixture. Place the cracker crumbs in a cake pan and press the minute steaks onto them, turning and pressing and repeat.

Heat a Cast Iron Skillet with a thin layer of oil and place the minute steaks in them. A twelve inch skillet can fit two to three steaks generally. With a pastry brush I brush the melted butter over the top. Allow to cook over medium high heat until brown on one side. Turn and repeat the on the other side. Try to not turn more than once or the coating will come off.  Total cooking time is about 10 to 12 minutes depending on the thickness of the minute steak.

These can be served with cream gravy, generally on the side. This varies from town to town, some do, some don't, and a very few offer brown gravy. It's all a matter of personal preference. Baked potatoes, hash browns or French fries generally compliment the meal as does a nice green salad and fresh green beans.

Hamburger can also be shaped and prepared in the same manner.

I prepare the green beans either on the stove top or the oven. If I am fixing them on the stove,  I generally brown a couple of pieces of bacon and lightly cook .25 cup onion in a small cast iron skillet, then I break up the crisped bacon and add green beans, .25 cup of water and .5 tsp garlic salt. Simmer for 10 to 15 minutes

If I am preparing the green beans in the oven, I use two cans of green beans drained, one small can of cream of mushroom soup, one small can of cream of celery soup, once half soup can of milk, one cup shredded cheese and .5 tsp each of garlic and onion salt. I mix everything together in a large bowl and then place the ingredients in a vegetable clay baker and bake 45 minutes at 350.
