The Wonderful Wok: Stir Frying Basics

Want to enjoy the tantalizing taste of Asian food at home? Invest in a wok! Stir-frying is one of the easiest ways to create a delicious, healthy dinner in minutes. Learn to prepare meals the Asian way: light on meat, heavy on the vegetables, and quick-cooked on high heat to retain vitamins and flavors. A few basics are all you need to get cooking!





Purchase your wok. You don't need to spend hundreds of dollars on state-of-the-art cookware. A standard, stainless-steel wok, purchased for less than $50, will serve its purpose well. The heavier the wok, the better it will retain heat. This is important because you must cook at a high temperature to avoid stewing or steaming your ingredients.





Season your wok. Before you use your wok for the first time, you must season it. Seasoning the wok is a way to "break it in" to ensure even heat-distribution during stir-frying, and helps lock in the flavors of the food as its cooking. When you remove your wok from its packaging, you may notice a greasy film on the surface. Wipe this film away, and wash your wok in warm, soapy water. To season your wok, put it on the stove over medium-high heat for a few minutes. Add a drop or two of oil, and swirl it around to coat the surface evenly. Remove from the stovetop to let cool for a bit, and then use a paper towel to wipe out the oily residue. You may want to season your wok once more before you begin cooking with it.





Gather your utensils. Professional chefs use a mesh ladle to toss meat and vegetables around in the wok, but if you don't have one of these, a wooden spoon will do just fine. Place several large, clean bowls and plates on the counter next to your wok so you can set your cooked items aside as you prepare them in batches. Other items you'll need: a chef's knife, cutting board, and several bowls of different sizes to store liquid mixtures and chopped herbs and vegetables.





Cut and dry food prep. The most time-consuming part of stir-frying is preparing the ingredients. You'll want everything portioned out and cleaned, chopped, sliced and diced in advance. The actual stir-frying is fast and furious (you've probably heard those pans rattling like mad while waiting for your Chinese takeout!) so meat, vegetables, noodles, spices and oils should be ready and within reaching distance so you can grab and get on with it. Chop everything into bite-sized chunks to ensure quick and thorough cooking. Make sure there's no extra water or other liquid in your wok while stir-frying meat and vegetables. As mentioned earlier, liquid in the wok will cause your meal to stew instead of lightly fry.





Stir-fry in batches. Properly stir-fried food retains its crisp, firm exterior and tender, juicy inside by cooking small portions at a time. Heat the wok, drizzle in enough oil to coat the surface, and add enough small cuts of beef, pork or chicken to just cover the bottom. Fry on medium-high heat, tossing the entire time. When your first batch of meat is thoroughly cooked, remove from the wok and drain on paper towels. Fry the second batch in a little more oil, and then set aside. Oil the pan once more, toss in a few cloves of crushed garlic and/or ginger, and stir-fry the vegetables, adding the thicker ingredients like potatoes and carrots first, and then tossing in quicker-cooking ingredients like scallions and mushrooms at the end. When the vegetables are done, return the meat to the pot with the vegetables, and finish with your liquid sauces and seasonings. Give everything a quick toss, simmer for a few minutes and then remove from heat.





Learn the flavors. Thai cooking is immensely popular right now; similar to Chinese, but with its own exotic spices and flavorings, some of which take their cue from Indian cuisine. Malaysian, Japanese, Vietnamese and Korean fare all boast their signature recipes as well. With practice, you'll learn which spices and sauces go with what and how to identify their flavors. You can buy most of what you need at an Asian specialty store.





Always have some Asian cooking staples on hand: soy sauce, oyster sauce, hoisin sauce, fish sauce. Fresh ginger, garlic, chillies, galangal, Asian shallots, scallions, kaffir lime leaves, cilantro and lemongrass. Green or red curry paste, shrimp paste. Noodles and rice. And of course... plenty of fresh meat, fish, tofu and vegetables. Pork, chicken, beef, shrimp, prawns, scallops. Onions, carrots, broccoli, snow peas, bok choi (Chinese cabbage), mushrooms (regular, oyster mushrooms, shitake mushrooms).





There really is no limit to what you can do with a wok, an assortment of meats, vegetables, spices and sauces. If you're the creative chef, feel free to experiment. If you're a "by the book" cook, go out and purchase a stir-fry cookbook which will explain each technique in detail as well as familiarize you with the exotic ingredients. Boneless Chicken Recipes - Easy & Quick To Prepare!

In a an additional one mixing bowl, merge chicken, buttermilk, applesauce, egg whites, and honey. Mix wet ingredients with dry ingredients just until moistened. Use an ice cream scoop to fill muffin tins 3/4 full. Bake for 20 minutes.

1 c Cream of chicken soup

2 T Oil

Brown boneless chicken in oil. Add soup, milk, grated cheese, mustard. Then add broccoli and pimento Cook 2 minutes. Serve over rice.

A Nepalese Chicken method

Nepal has a range of cuisines because the country has varying climates, ethnicity, and soil types. How To Make It:

Combine a tablespoon of the yogurt with half the garlic and half the salt and pepper. Marinate the chicken in this compound in the refrigerator for half an hour. Chop the bell peppers, onion, and one of the tomatoes.

Pour one tablespoon of the oil into a pan and slowly fry these vegetables for half an hour. Add a pinch of black pepper and cover the pan so the vegetables can steam.

Fry the chicken in a skillet until it is golden brown. Drain the fat off. Heat a tablespoon of oil in an additional one pan and fry the other tomato, after peeling and de-seeding it and crushing it a bit. Add the remaining garlic, the cumin, and coriander to the pan and fry for five minutes. Add three tablespoons of the yogurt or four if you prefer a wetter mixture.

Stir in the chicken and let it cook until the gravy is thick and oil appears on the pan edges. Replacement the steamed vegetables to a warmed serving platter and spoon the chicken compound on top. Serve the white rice on the side.

Turn Your Left Over Rice Into Tasty Chinese Fried Rice

Turn your leftover white rice into the best fried rice you ever had! Fried rice is one of my favorite Chinese dishes. Shrimp, beef or chicken, I love them all. When I go out for Chinese food, I all the time take all of the leftover white rice back home for manufacture fried rice that lasts me any days.

It's uncomplicated to make, but you must have the right ingredients to make it taste like you bought it at your favorite Chinese restaurant. Here's what you need:

Pan Fried Chicken

2 - 4 cups of cooked leftover white rice
1 - 2 eggs
2 - 3 garlic cloves chopped
2 - 4 tablespoons of Kikkoman Soy Sauce
2 - 3 teaspoons of Sesame oil
1 - package of icy peas (optional peas & carrots)
3 - tablespoons of Peanut oil or Olive oil ( I all the time use olive oil because it is healthier but peanut oil is beloved in Chinese cooking because of its high burning temperature.)

A hand full of chopped fresh shrimp, chicken or beef chopped

This first step took me a long time to learn, but it is the most important part of the whole recipe. Beat your eggs as if you were going to make scramble eggs.

I use an old wok that I got at a stable sale but you can use any good frying pan. Place 1 tablespoon of oil into your pan and heat the pan to high. Before the oil starts to smoke throw in your eggs and beat until they are over cooked and start breaking apart into smaller pieces. Take off your eggs from the wok and place them into a package for later.

Now add 1-2 tablespoons of oil and ½ the chopped garlic. All things should happen fast if you have your heat on high so be fast. Throw your shrimp or meat in the wok and stir fry for a few minutes until cooked and then Take off from the wok and place into the package with the eggs.

Now add the rest of the oil and 1-2 teaspoons of sesame oil. Add all the remaining chopped garlic and a handful of icy green peas. Stir fry for a tiny then add the white rice and stir fry for other few minutes. Add all the ingredients that you put aside in the package and start putting in soy sauce as you continue to stir fry.

Taste it as you go along and you may want to add more soy sauce or sesame oil. Enjoy!

I spent two years in Japan and loved the way they served and presented fried rice to you in a restaurant. Here is this presentation trick I learned while in Japan.

Get a nice shaped Chinese or Japanese soup bowl and pack down your fried rice in a bowl. Place a flat serving dish on top of the bowl and now place your hand on top of the flat dish while turning the dish upside down. Put into the microwave for a few minutes with the bowl still on the rice.

When you take the fried rice out of the microwave Take off the bowl and you have a nice shaped mound of fried rice ready to be served.

If you make a bad processed microwave or oven-ready breakfast, or grab something on the way to work, in addition to starbucks or some other coffee chain, you'll already save 300 per month just on one meal of the day by switching it up.
For lunch you have a lot of options if you pre-make the meal and bring it to the office. You can slap pan-fried chicken breasts on bread with veggies and your choice of dressing, all for around a dollar for a delicious and healthy meal. You can make pasta and bring it in tupperware. It's up to you.
For dinner, you can make any meat you picked up along with sauteed vegetables, steamed broccoli, potatoes, anything really. It's up to your imagination. Cooking instead of popping in some microwaveable or processed pre-made dinner will save you 5 dollars per meal.
These changes will not only have you shedding several pounds per week (without even being hungry), but you'll gain valuable cooking skills, and will save between 300-600 dollars per month depending on how you eat right now. That's enough for a luxury car lease, or enough to pay for some of or all of your rent. A Traditional Italian Meal

A traditional Italian meal comprises of different segments. Each segment have its traditional name.

PRIMO named as first course in a traditional Italian meal often comprise of a hot dish for example gnocchi, risotto, pasta, polenta or soup with lots of vegetarian choices. It traditionally has the most carbohydrate. Alternativelly it could be a copld plate of mets, olives and breads with balsamic vinegar.

SECONDO (second course): Ina traditional Italian meal this is generally considered as the major dish of meat or fish. Chicken, Pork and Veal are conventionally the most frequent in an Italian SECONDO course and are often casseroled or pan-fried. Beef is used as steaks (bistecca) while lamb (agnello) is roasted on particular traditional events, for example Christmas and Easter. In Italian cuisine seafood especially fish are mostly used as major or main courses.

CONTORNO (side dish): In a traditional Italian meal CONTORNO possibly a fresh salad or cooked vegetables. But it is also a fact that salad is usually provided with the major course. Commonly used vegetables are beans (pulses and greens), potatoes (often salty) and carrots.

DOLCE (dessert): In a traditional Italian meal DOLCE or desert is also named "the cakes and cookies course". Italian cuisine has a number of sweet treats and sweet desserts. These Italian sweet dishes or desserts include Amaretti -- almond flavored meringues which are famous as macaroons in Australia, Panforte, -- sweet semi solid strong bread prepared withy nuts and dried fruits and Pannettone, an extremely tasty bread-cake.

Finally the Coffee: Italian coffee is the essence of Italy. But Italian Coffee is somewhat of a misnomer if taken literally as very little, if any, coffee is actually grown in Italy.

The proper way to make Italian coffee is to make it the way the Italians do. Brie Appetizer formula - Fried Cheese Cubes

This Brie appetizer recipe takes only a few minutes to put together and you could make it at the last minute for unexpected guests. They will be very surprised and pleased that you could come up with something so warm and tasty at such short notice. Although this recipe calls for Brie cheese, you could successfully use it with any slice-able cheese that melts easily.

Croustillant de Brie

Pan Fried Chicken

1 egg 1 tablespoon water 2 tablespoons all purpose flour 1/2 cup dried fine bread crumbs 8 ounces Brie cheese vegetable oil for frying

In a small, shallow bowl, use a fork to beat the egg with the water until blended.

Place the flour on a plate.

Place the bread crumbs on a plate.

Slice the Brie into 24 or so equal sized cubes.

Dredge each of the pieces in the flour, then shake off the excess.

Next dip each piece of cheese in the egg, turning to coat all sides with the egg.

Finally, roll the pieces in the bread crumbs. You will probably need to use your finger tips to make sure each piece is well coated.

If you wish, you can now place the breaded cheese in the refrigerator for several hours to wait until you wish to serve. Otherwise, you can fry right away.

To fry, heat 1/8 inch of oil in a sturdy frying pan on medium high heat. When the oil is hot, add the cheese. It will speedily brown. Turn gradually to brown on all sides. The whole process will take only one or two minutes. Be specific not to leave the cheese in the oil for too long or it will break through the breading and ooze.

Remove the cheese from the cooking oil and place on paper towel to discharge some of the oil.

Serve the fried cheese cubes immediately with toothpicks or forks.

Makes 24 appetizer bites.

You may wish to offer a dipping sauce with this Brie appetizer recipe. The salty mild taste of Brie goes very well with fruit flavors and you could try dipping it in jam thinned with a minute water - fig, apricot or raspberry would all be sensational. If you mix the jam with a minute vinegar instead of water, you will get a great tasting sweet and sour sauce.

Preparation

1. Put cooking oil in a pan (medium heat)
2. Put green curry paste in a pan and stir fried for 2 minutes
3. Put chicken in a pan and stir fried until chicken is cooked
4. Put coconut milk, fish sauce and sugar in a pan
5. Wait until the coconut milk is boiling, turn the heat off and put the basil leaves on top

Now you are done. It smells so nice, isn' it? If you want it to more spicy, you can add more green curry paste. You can eat chicken green curry with steamed rice or spaghetti if you want. It is very appetizing and so easy to cook, isn't it ? Okay, enjoy your meal.

Finely chop the chicken breast. Add the scallions with abundant salt and pepper and add the egg yolks as a thickener. Mix. Empty out the mushroom caps and fill them with the stuffing. Butter a baking pan and arrange the mushroom caps in it, then place it in a preheated oven (175?C/347?F) and cook for 25-30 minutes or until the mushrooms are tender and the stuffing browned. Spray with lemon juice and serve warm.

1 ½ spoons butter, 250g cubed speck, 1 whole chicken (approx. 1.5kg) cut to pieces, 2 sliced onions, 250g mushrooms without stems, 2 parsley stems, ½ clove of crushed garlic, 1 bouquet of herbs, salt and pepper, 250g skinned and quartered tomatoes without seeds, 1 cup chicken broth.

Preparation:

Melt the butter in a pan and lightly brown the speck over a medium flame. Add the chicken pieces with the skin to the pan and fry them for about 5 minutes or until the meat becomes firm and white. Add the onions, mushrooms, parsley, garlic, bouquet of herbs and salt and pepper. Continue cooking over a medium flame, stirring and turning the chicken every so often for 20 minutes or until the onions have come to be soft and the chicken tender. Add the tomatoes, inspiring the chicken pieces on top of the tomatoes and continue cooking for a added 10 minutes. Place the chicken on a serving plate and keep warm. This spacious restaurant boasts a large dining area that seats 150, two private dining rooms that seat 24 and a private tatami corner that seats 12. Despite the size, this restaurant still exudes a sense of cosiness and comfort. This, perhaps, can be attributed to Minori's dĂ©cor concept, which centers on the theme, of the reaping season. "Minori", by the way, is Japanese for "harvest". Minori's (the restaurant) interior decoration is cleverly pulled together by artistic elements such as murals of rice harvests and art installations of dried reeds – perfect complements to Minori's mahogany colour palette, dim lighting and spaciousness.

The good people at Minori are set on ensuring that every diner – from the buffet fanatic, to the corporate luncher, and to the sake barfly – gets his fill.
For the buffet fanatic, a whopping 120-item buffet menu consisting of fresh sashimi, sush i, teppanyaki dishes, sumiyaki dishes and cooked dishes awaits at Minori. For starters, Minori's sashimi selection includes fresh, thickly-sliced salmon, tuna, black king fish, octopus, yellowtail, snapper and cuttlefish. If you want to sample an assortment of several sashimis at once, opt for the Sashimi Moriwase, a visually-appealing platter of five kinds of sashimis of your choice. I like chicken, and we all the time seem to keep many 4 lb bags of boneless "chicken tenders" in the freezer for all kinds of purposes. This method is the perfect quick meal because all you have to do is put some freezing boneless skinless chicken in your microwave and defrost it about half way - and then pre-heat your oven to 375.

Pan Fried Chicken

These are the ingredients you're going to need:

* 1 cup instant mashed potatoes

* boneless skinless chicken

* seasonings (salt, pepper, garlic and/or onion powder)

* butter or margarine

While you've gotten this stuff colse to your chicken should be thawing out in the microwave. When I say you want it about half way (or more) thawed out - I mean it should be pliable, but you should be thawing it out not cooking it. You shouldn't have the ends turning white and cooking - they'll get hard or rubbery in the oven. I freeze nearly all my meat and thaw out only what I need when I need it.

Get a 9 x 13 baking dish and grease it up with some oil - we like olive oil. You're going to take whether a very large mixing bowl or a big ziploc baggie and put the instant mashed potatoes in it. Add your salt, pepper, and any other seasonings you want to taste in the bag or bowl. You're going to place one chicken breast piece in at a time and shake it up coating with the instant mashed potatoes mixture. Then place each in the greased baking dish. How many chicken pieces you use depends on how many people you're serving. If you are using the "chicken tenders" like us - then usually 2-3 pieces per person is fine. If you're using an whole "chicken breast" I would use one per person.

Once you get them all coated and in the pan - add a dinky pat or 1/2 tsp of butter or margarine on top of each one to melt in as they bake. Bake 35-40 minutes on 375, how long depends on how many pieces of chicken you use. You want to take the chicken out when nice and tender - not "crispy" (unless you like it that way).

Twist the recipe:

If you've read my other recipes than you know I love to "twist" or have multiple variations of the same thing. This is because you can't have all things on hand all the time. So - instead of instant mashed potatoes you could use saltines, or ritz crackers, or even club crackers. Also you could add some veggies like carrots or potatoes to the pan and bake an whole meal at once ready to serve! If I did this I would add a cup of whether water or chicken broth to the lowest of the pan and cover with foil to steam the veggies nice and moistly as the chicken bakes.

Best Sesame Chicken recipe

Chicken marinated in a rice wine, soy sauce, ginger and garlic marinade, then fried and sprinkled with roasted sesame seeds. My house already tried and loved it. A appetizing Chinese chicken recipe.

Ingredients:

Pan Fried Chicken

1 pound boneless chicken
2 tablespoons sesame seeds
1 tablespoon sesame oil
2 tablespoons vegetable oil
4 ounces small mushrooms, quartered
1 large green bell pepper, seeded and cut into strips
4 scallions, chopped diagonally
boiled rice, to serve

Marinade:

2 teaspoons cornstarch
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon lemon juice
1 tablespoon soy sauce
few drops of Tabasco sauce
1-inch piece fresh ginger, grated
1 garlic clove, crushed

1. Trim the meat and cut into thin strips about 1/2 x 2 inch.
2. Make the marinade: In a bowl, blend the cornstarch with the rice wine or dry sherry, then stir in the lemon juice, soy sauce, Tabasco sauce, ginger and garlic. Stir in the strips, cover and leave in a cool place for 3-4 hours.
3. Place the sesame seeds in a wok or large frying pan and dry-fry over moderate heat, shaking the pan, until the seeds are golden. Set aside.
4. Heat the sesame and vegetable oils in the wok or frying pan. Drain the meat, reserving the marinade, and stir- fry a few pieces at a time until browned. Remove with a slotted spoon.
5. Add the mushrooms and green pepper and stir-fry for 2-3 minutes. Add the scallions and 1 minuscule more.
6. Return the meat to the wok or frying pan, together with the reserved marinade, and stir over a moderate heat for a added 2 minutes, or until the ingredients are evenly coated with glaze. Sprinkle the sesame seeds on top and serve immediately with boiled rice.
