What is an Induction Frying Pan? An Induction frying pan, also know as a magnetic fry pan are used on induction cooktops or any cooktop for that matter. Induction Cooktops do not heat up like conventional electric or gas cooktops.

Induction cooktops use what is called an induction hob instead of the traditional burners to cook the food. When turned on these induction hobs produce a magnetic field which reacts with magnetized cookware when placed on the hob. The pan immediately becomes hot in a second or two.

If the cookware is not magnetic then it will not work at all. A simple way to see if the frying pan you own is induction-ready is to place a magnet on the bottom of it. If the magnet sticks to the bottom then you can use it on any induction cooktop.

Magnetic cookware is slowly going mainstream and prices can vary greatly from brand to brand. An induction frying pan can cost anywhere from to 0 each depending on the brand name.

Usually the higher priced fry is made better but is it worth the extra money? Some say yes, but let me tell you that the Chinese are producing some nice inexpensive induction fry pans and they are very cheap.

Chefs are finicky, some prefer to use only fry pans manufactured in countries such as France, Belgium or Germany while others could care less about the brand name and country it was made in. They are more concerned about getting good quality at a good price.

The best way to test the cheaper Chinese imports is to order one frying pan and check it out for yourself. When it arrives take a careful look at it and see if it is acceptable to you. Maybe boil some water in it to test it out. If you are happy with the pan then go ahead and order more pans from the same line.

If the pan does not meet your standards simply return it for a refund. Of course you may have to pay return shipping but if you choose a small pot or pan for the test then return shipping will be very inexpensive.

Chicken With Bacon, Banana, and Peanuts

There's so much you can do with chicken. This is a quite original dish containing banana and peanuts. It's originally a Swedish dish called "Flygande Jakob" which means "Flying Jacob"  in English. The name derives from the founder of the recipe, Ove Jakobsson who was a flight freight manager. The recipe reached the magazines in 1975. The original version is supposed to be oven baked but takes significantly longer. This version of the dish can be made directly on the stove and will take less than 30 minutes to complete. A great recipe for the whole family. The kids love the combination of banana and peanuts.

Fruit Cocktail Dessert and Oven Fried Chicken

Oven Fried Chicken:

1 stick of butter, or margarine
1 egg slightly beaten
2 Tablespoons of water
2 and 1/2 to 3 pounds of frying chicken cut up
1 4 cup grated parmesan cheese ( optional )
1 and 1/4 cups of potato flakes
1/4 teaspoon of garlic powder ( optional )
1 teaspoon of onion salt, ( optional )
1/2 teaspoon of paprika, ( optional )
1/2 teaspoon of salt, pepper to taste.

Pan Fried Chicken

Melt butter in a shallow 9 x 13 baking pan. In separate bowl, combine egg and water, set aside
Mix potato flakes, seasonings, and cheese together. Dip chicken pieces in egg mixture; roll in potato flakes
cheese mixture. Place skin side down in melted butter, turn, and bake skin side up at 400 degrees
for 40 to 60 minutes.

This recipe was given to me by my cousin, Charlotte Dunham. Its so easy and yummy.

Fruit Cocktail Dessert:

2 medium size cans of fruit cocktail

1 to 2 cups shredded coconut

1 medium container of frozen whipped topping ( thawed )

( optional ) 1/2 cup chopped pecans, 1/2 cup of raisins

In medium size bowl, place drained fruit cocktail, add shredded coconut, nuts and raisins stir.
Add thawed whipped topping, stir. Cover and chill before serving.
Cover and refrigerate any remaining dessert.

This recipe was given to me by my grandmother, Ora May Rozzel, when I was a very young mother.
My children always loved it when they were little. Thank you so much Grandma, I miss you.

Paella is Spain's gift to the world; or to be more precise, Valencia's legacy. The original Valencian Paella is a mixture of rice with meat, snails, eels, vegetables, beans and seasoning. Cooking Tips and Substitutions for Corn Flour, Corn Meal, Cornstarch and About That Johnny Cake

Several different types of cooking ingredients come from corn. Corn bread, stews and even fried catfish recipes call for some form of corn. If you are missing an ingredient knowing its equivalent or substitution can save grandma's recipe from oblivion. If you know the use of an ingredient, it is easier to come up with a substitution. Today Mom explains corn starch, corn flour, cornmeal and that Johnny Cake.

Corn Starch: Made from the endosperm of the corn kernel. Cornstarch is used to thicken sauces, soups and stews. Substitutions for cornstarch are as follows: 1 tablespoon cornstarch = 2/3 tablespoon arrowroot OR 2 tablespoons all purpose flour OR 1 tablespoon potato starch OR 2 tablespoons quick-cooking (instant) tapioca.

Pan Fried Chicken

Corn Flour: Made by grinding whole corn kernels into a fine powder. It is used in combination with other flours to make breads, or for breading items for frying. Corn flour contains less gluten than wheat flour. When baking, substituting corn flour instead of wheat flour will result in a heavier bread. If you just need corn flour for breading, you can use regular flour instead.

Corn Flour can also be used to thicken sauces. If you don't have corn flour, substitute with corn meal ground to a powder in a food processor. You can also thicken sauces by substituting regular wheat flours in the same measurements.

Sauce Cooking Tip: Before adding any powdered thickener to a sauce it is a good idea to dissolve it first. Use a little liquid from your sauce, or some broth, juice or water (about 1/2 cup or less). When your thickener is dissolved in liquid, carefully stir it into your sauce with a fork or whisk. This helps cook up a smooth sauce with no lumps.

Cornmeal: Made from ground corn, usually without the corn skin or germ and has a coarse texture. Cornmeal doesn't contain gluten so it is generally used to make quick breads or breads with a cake-like texture. If you don't have one cup of cornmeal substitute one cup of grits or polenta.

Cornmeal is sometimes called for in bread recipes for dusting a greased pan. Dusting a pan helps keep the bread from sticking to the pan. It also gives the bread crust an extra little crunch and a hint of flavor. If you don't have cornmeal you can substitute corn flour, regular wheat flour or any other flour to keep bread from sticking. If you still want that crunchy texture try pulverizing some corn flakes instead. Or try using another thinly ground grain like steel cut oats or cracked wheat.

Johnny Cake: Johnny Cake or Journey Cake is a simple quick bread made with corn and water plus sugar. Hoecake technically, is a corn cake cooked over the fire on the back of a hoe (or shovel). The method still works - but don't forget to grease your shovel first, or the hoecake will stick! Over the years we have added salt and leavening agents to our corn cake recipes for variations on the same corny theme. Here's a great old-fashioned recipe for Corn Cake using molasses as a sweetener.

Molasses Corn Cake

1 cup corn meal

3⁄4 cup flour

3 1⁄2 teaspoons baking powder

1 teaspoon salt

1⁄4 cup molasses

3⁄4 cup milk

1 egg

1 tablespoon melted butter (or margarine)

Mix dry ingredients together in a bowl. Add milk with molasses, egg well beaten, and butter. Bake in shallow buttered pan (roughly 9x9 or 8x8) in 425 degree oven for twenty minutes.

Easy Measuring Tip: The easiest way to measure the molasses for this recipe is to use the same measuring cup as the milk. First, pour the milk up to the 3/4 cup line. Then add the molasses until it measures 1 cup. If you still have room in the cup, add the egg and mix everything together before adding it to the dry ingredients. How to Make Goan Spicy Chicken and Coconut Curry

This recipe is bursting with the flavours of southern India. The bite of the chopped chillies is mellowed by the sweet flavour of the dried grated coconut and rich coconut milk. That together with the essential fresh curry leaves, poppy and mustard seeds and of course garlic and ginger make this a dish not to be missed!

I have made this curry in many different ways. I've tried it with chicken tikka (small bite sized pieces of chicken), whole chicken, quartered chicken and many different types of game such as pheasant, quail and partridges.

Pan Fried Chicken

This time of year when game is difficult to find, I make it with two small chickens weighing about a pound each. The chickens are stuffed with a spice mixture and then trussed to keep the stuffing and juices in while they are pan fried and then simmered in coconut milk.

If you like spicy chicken curries, you're going to love this one!

Serves 4 hungry people

Preparation time: 20 minutes
Cooking time: 30 minutes

INGREDIENTS

2 x 450g (1 lb) free range chickens or 4 small quails

3 Tablespoons ghee or clarified butter
10 curry leaves
1 Tablespoon mustard seeds
1 Tablespoon poppy seeds
2 Tablespoons coriander seeds
2 Tablespoons cumin seeds
1 inch cinnamon stick
1 teaspoon cardamom seeds
1 large red onion - finely chopped
1 inch ginger - finely chopped
4 green chillies (or more) finely chopped
6 cloves garlic - smashed and finely chopped
1 Tablespoon red chili powder
1/2 dried and grated coconut
4 tablespoons vegetable oil
500ml coconut milk
4 Tablespoons cream
salt and pepper
1 Tablespoon garam masala
Juice of one lemon
3 Tablespoons chopped mint leaves

method

In a large heavy bottomed frying pan over medium heat, dry fry the poppy seeds,coriander seeds,cumin seeds, cinnamon and cardamom seeds until they begin to smoke.

Remove from the heat and transfer to a spice grinder or pestle and mortar and grind to a fine powder.

Now put the ghee in the frying pan. When the ghee melts, add the curry leaves and mustard seeds. When the seeds begin to pop, add the chopped onion.

Fry until the onions turn light brown and become translucent.

Add the spice powder, ginger, green chillies, garlic, chili powder and grated coconut and continue to fry for another 2 minutes.

Stuff your chickens with this stuffing and then truss the birds to keep all the stuffing in.

Add the vegetable oil to the pan. When the oil is good and hot, add the chickens and fry them all over so that the skin turns a shiny, crispy brown.

Pour in the coconut milk and cream and simmer until the chickens are cooked through - about 20 minutes.

to serve

Cut each chicken into eight pieces. Scrap the stuffing into the coconut sauce and mix well.

Add the garam masala and salt and pepper to taste.

Place a couple pieces of chicken on each plate with a little sauce, a squeeze of lemon juice and top with chopped mint leaves.

Soak up the juices with saffron rice or naan bread.

Here is another meat dish that is widely enjoyed in the Korean community. It is called Dak Gal Bi. Dak Gal Bi is a spicy chicken dish that is pan fried with vegetables. It is served usually at dinner times and sometimes in bars as a side dish to the soju, or korean rice wine. There are many different ways to make Dak Gal Bi, such as by varying the level of spiciness or adding different vegetables to the dish, although the common vegetables include carrots and onions. Here's how to make Dak Gal Bi.

Here are the ingredients that you will need to make this dish: a chicken, yam (or sweet potato), carrots, an onion, korean chili paste, korean chili pepper powder, garlic, soy sauce, sesame oil, sugar, honey, and black pepper.

Pan Fried Chicken

The first thing you are going to have to do is prepare the chicken. Clean the chicken and cut off all the meat. Throw away the leftover bones and fat that you won't need. Take the chunks of chicken and cut them into smaller pieces. Leave them aside for now.

Next, take the chili paste, chili pepper powder, garlic, soy, sauce, sesame oil, sugar, honey, and black pepper and make yourself a marinade for the chicken. The amounts of the dish are up to you because I don't know how spicy or not you want the dish. After you finish making your marinade, put your cut up chicken in, make sure all the chicken is evenly coated, and let it sit for a good 10 to 15 minutes.
While the chicken is marinating, cut up the yam into fry shaped pieces, and chop the carrots and onions into small pieces.

After the chicken is done marinating, grab a pan on medium high and start cooking the chicken. After the chicken has been cooking for about 10 minutes, add the vegetables. Continue to stir and cook until the chicken is done.

Although this recipe is very vague on how much to put of each ingredient, it is because it all depends on the eaters tolerance level of spiciness. After you fully master how to make Dak Gal Bi, you can teach your friends and family how to make this dish.

Headless Man Seen Running Through Southeast Asia

What's a hook and why does it matter? Here's the short answer. The title of your book, article, speech or sales ad is a hook and it's designed to grab the attention of your reader. The longer and more appropriate answer is that a hook is the single most important piece of text you write to get people to read your book, article, speech or sales ad. Your hook is everything. If your hook does not immediately grab the attention of your reader, nothing else matters. Let me explain.



Joe Sugarman, the author of "Triggers," is recognized as one of the nation's top copywriters. According to Joe, the purpose of your hook is to get the reader to read the next line of text. Period. If your hook causes your reader to open your book or read your article or listen to your speech, it's a good hook. If it doesn't, you're wasting your money.



Up until recently I spent very little time thinking about the title of my articles or the headlines of my Google ads. But all of that changed when my son and I started researching how to use social bookmarking sites to generate traffic to our website. What caused thousands of people to read an article entitled, "Headless Man Seen Running Through Southeast Asia" when only a handful of people took the time to read, "Writing A Hook?" Here's what we discovered.



As human beings, we have a sense of wonder that causes us to act in a certain way. We're told not to open Pandora's box and we open it. We have an opportunity to prove the status quo wrong and we take it. We're told about something that is contrary to our belief system and we challenge it. For example, did you know that it's impossible to fold a piece of paper more than eight times and it doesn't matter how big or thin the piece of paper is? It's simply impossible.



As a marketing person, I don't need to tell you to try it. You're sense of wonder will take over and you'll grab a sheet of paper and fold it seven times. Then you'll grab a tissue and fold it seven times. And, if by some freak of nature you do fold it eight times, you're going to make sure I know about your success. People who write great hooks understand how to take advantage of a person's sense of wonder.



Here are five quick ways to grab the attention of your reader using their sense of wonder.



Start A Story.

This one gets me every time. What happened to Hansel and Gretel? Did the Big Bad Wolf catch Little Red Riding Hood? Who was the headless man seen running through Southeast Asia? I just have to know, and so do millions of other people.



Find a way to tell the first part of your story using no more than seven words and your readership will go up by a factor of ten.



How Is That Possible?

In the marketing world this is know as an unbelievable claim. How can a laser beam brighten your smile in less than five minutes? How is it possible that doctors can grow hair on a bald man using chicken feathers? Don't you want to know? Of course you do. Your sense of wonder won't let you stop until you find the answer.



Is there something amazing about your product or service that seems impossible? Use it to write a hook that engages your readers.



Disclose Information

Mosquito repellants don't actually repel mosquitoes? In every episode of Seinfeld there's a Superman somewhere? Forty percent of all people who come to a party in your home will snoop in your medicine cabinet. I didn't know that and I'd bet you didn't either.



Disclosing information is a sure way to stir the sense of wonder. Better yet, it will cause people to read your article, book or sales ad.



The Biggest And The Best

Way back in 1996, John Travolta starred in the movie, "Michael." The movie was about Michael the Archangel who was sent to Earth to mend some wounded hearts. Once his job was completed Michael was expected to go back to heaven. But before he left he took his entire cast of characters across the country to see the world's largest everything. That included the world's largest frying pan and the world's largest ball of sting in Cawker City, KS.



It's not just archangels who are interested in seeing and reading about the biggest and the best. Every human being wants to know what's the world's oldest or tallest or fastest.



Be Controversial

Do you want the attention of Red Sox or Yankee fans? If so, here's a hook that will grab them both. "Ten Reasons why the Red Sox are Better than the Yankees." Or maybe you could entitle your article, "Ten Reasons why the Yankees are Better than the Red Sox." Either way you're going to get the attention of both. One person wants to read your article because they agree with the headline and the other wants to read your article because they disagree with it. Controversy sells.

With a small teaspoon of olive oil, butter, margarine or cooking spray in a large skillet or frying pan, you're ready to go.

First place half a cup of chopped onion in frying pan and cook 3- 5 minutes. Next add cabbage and cover on medium high heat for 3 minutes. Uncover and stir mixture, then cook another 3 minutes. Check and remove when cabbage is soft. Season with one teaspoon of butter or margarine, garlic powder, onion powder, and seasoned salt and a half teaspoon of black pepper. If you like yours a little spicy you can add a teaspoon of hot sauce if like your cabbage to bite back a little. Serve hot with your favorite meat. This recipe makes 4-6 servings. Pan Fried Chicken

Valentines day 2010, recipes for meals to make your lover a meal on Valentines night, romantic & special. Firstly we need aphrodisiac foods for a valentine's day meal, to get the hormones and passion flowing.
You may well be thinking what can I make which refers to valentines and romance, well the room you prepare before hand will begin the ambiance within your home with lit candles and flowers and soft music and you and your partner create the rest.
Here are a few recipes for valentines day 2010 you may want to try;
Starters
Prawn cocktail
You will need 4oz peeled cooked prawns (replace with lobster if preferred)
tbsp tomato puree
75ml mayonnaise
1 tsp creamed horseradish
Splash of Worcestershire sauce or Tabasco
Lemon juice
60ml of finely shredded lettuce heart
2 thin lemon slices to garnish
Choose 2 of the largest prawns to garnish the cocktail and leave for the finished product. Mix the tomato puree, mayonnaise, creamed horseradish, Worcestershire sauce or Tabasco and add your desired amount of lemon juice to your taste.
Divide the shredded lettuce heart between the two cocktail glasses. Arrange the prawns on top of the lettuce and cover with earlier prepared dressing. Chill in the fridge for 1 hour. Just before serving hang the prawn from the glasses and make a slit in the lemon and put along the rim.

Avocado soup with almonds
1 ripe avocado
3 tbsp lemon juice
cup chicken stock
cup double cream
4 tbsp medium white wine
Salt and freshly ground pepper
1 tbsp toasted slivered almonds
Halve the avocado, throw away the stone and scoop out the flesh. Liquidize with the lemon juice. Put the chicken stock in a pan and bring to the boil, stir in the cream and wine. Remove from the heat and beat in the avocado puree. Season then leave to cool and then refrigerate. Divide between 2 soup bowls once chilled and add the almonds on top.

Main
Asparagus quiche
75g/3oz butter
50g/2oz lard
225g/8oz plain flour
3 tbsp water
3 eggs
200ml/1/2 pt single cream
A pinch of fresh grated nutmeg
Salt and pepper
2 tbsp plain flour
225g/12oz canned asparagus tips
75g/3oz green stoned olives
1 onion chopped and fried in butter
50g/2oz grated cheddar cheese
1 tbsp grated parmesan cheese
Rub 50g/2oz of butter and the lard into the flour and mix with enough water to make a pastry. Roll out and line in a 25cm/10 inch flan ring. Cover with greaseproof paper, fill with baking beans and bake in a preheated oven at 190c/375f/gas mark 5 for 10 minutes. Remove the paper and beans. Whisk the eggs, cream, nutmeg and salt and pepper. Mix a little mixture with the flour then stir it into the cream. Arrange the asparagus, olives and onion in the pastry case, pour over the cream and sprinkle with the cheeses. Bake for 25 minutes. Then reduce the heat to 180c/350f/gas mark 4 for a further 15 minutes until the quiche is golden brown and serve with a side salad, garlic bread and dips.
Rump steaks with horseradish cream
Whipping cream cup
Grated horse radish from a jar
Salt and pepper
2 rump steaks
Oil
Sweet paprika pepper
Whip the cream until thick and mix in the horseradish, season with salt to taste and refrigerate until serving. Lightly beat the steaks and place on a greased griddle pan. Cook on high heat for 1 minute on each side to seal in the flavors, brush the steaks with oil and sprinkle with salt, pepper and paprika pepper and cook for a further 2 minutes on each side. Serve with the horseradish sauce on top and accompany with cooked roasted potatoes and carrots.

Valentine creams
4oz cream cheese
200ml/7fl oz whipping cream
1 oz icing sugar
1 tbsp ground cinnamon

Whisk the cream cheese with 4 tbsp of cream until light and fluffy, sift in the icing sugar and cinnamon and blend. Whip the remaining cream until stiff and fold into the mixture. Line 2 moulds with damp muslin, spoon in the cream and press to remove any air bubbles. Fold the muslin over the top and stand on a rack over a tray. Refrigerate for 8 hour. Turn out carefully, spoon over some raspberry sauce.
Banoffee pie
10 ginger biscuits
50g/2oz butter
1 large banana
1 packet butterscotch angel delight
300ml/1/2pt milk
1 chocolate flake
Place the ginger biscuits in a bag and crush them with a rolling pin. Melt the butter in a saucepan, remove from the heat and mix in the biscuit crumbs. Press the mixture into a flan ring base and leave to cool and set. Slice the banana and arrange the slices on the biscuit base. Whip up the angel delight with the milk according to the instructions on the packet. Pour over the banana and leave to set and decorate with crumbled flake.

- 1 clove garlic, minced

- 1 small sweet red or green pepper, sliced

Easy Chicken Recipe - Chicken Pies With Rice Crusts (And it is Diabetic Friendly!)

Chicken is economical, easy to prepare, and healthy, making it one of the most often prepared items in our kitchens. If you are tired of serving chicken the same old ways, check out this recipe for a new idea in your family meal planning. This recipe for Chicken Pies in a Rice Crust is a great way to serve chicken.

CHICKEN PIES WITH A RICE CRUST

Pan Fried Chicken

Rice Crust:

1 cup raw brown Basmati rice

2 cups chicken stock

1/3 cup chopped pecans or almonds

2 tbsp chopped chives or green onion tops, finely chopped

2 tbsp toasted sesame seeds

Salt and pepper to taste

2 egg whites

Wash rice. In a large saucepan with a lid, bring the chicken stock to a boil. Stir rice into boiling stock and bring back to a boil. Lower heat to simmer, add lid to pan and cook 45 minutes, until rice is tender and stock is absorbed. Preheat oven to 375 degrees. Cool rice to lukewarm and add pecans, chives, sesame seeds, salt, pepper, and egg whites. Pat onto the bottom and sides of 4 individual quiche dishes to form crusts. Bake in a 350 degree oven for 10 minutes.

Chicken Filling:

4 large skinless, boneless chicken breasts

1 tbsp olive or canola oil

1/2 tsp salt

1/4 tsp fresh ground black pepper

1 cup water

8 tbsp Worcestershire sauce

1 tbsp Dijon mustard

2 garlic cloves, crushed

Cut chicken into small chunks. In a large frying pan, heat oil. Add chicken and cook to a golden brown. Season with salt and pepper. Remove chicken from pan and allow to drain on paper toweling. Wipe any excess oil from the pan. Return pan to heat and deglaze with water and Worcestershire sauce. Add mustard and garlic; bring to a boil. Lower heat to simmer, add chicken back to pan and cook for 5 minutes. Fill the rice crusts with the chicken mixture.

Yield is 4 servings at 490 calories, 45 g carbs, and 37 g protein each making this a good chicken and rice dish for diabetics.

The crust on pizza is made from processed white bread flour and pan crust only adds more to this already bad food. If you absolutely have to order pizza then make sure and get thin crust.

How to Make Vietnamese Chicken Rice Soup - Chao Ga

Chicken rice soup, also called chicken congee or chicken porridge is commonly used to nurture sickly family members. This hot chicken soup in addition to onion slices and Vietnamese coriander (rau ram) is very light and easy on your stomach, and it's a traditional way to help ease the fever, headache, and sore throat. I always cook this soup when anyone in my family is sick. My husband loves it, he always asks for Chicken Rice Soup when he's not feeling well. This dish can also be served as a light lunch or dinner.

Recipe for Chao Ga - Vietnamese Chicken Rice Soup or Chicken Congee:
1/2 small onion, lightly grilled
1 small piece of ginger (2 inches), sliced
1 tbsp Asian fish sauce
Salt
1 tsp cracked black pepper
1/2 (2lb) whole chicken
1 piece of rock sugar (~1 tbsp sugar)
1/3 cup long grain rice
1/3 cup mung beans (no skins)
1 lime, cut into wedges
2 tbsp chopped Vietnamese coriander leaves
1 tbsp sliced scallions, or onions
2 tbsp of chopped cilantro leaves

Pan Fried Chicken

In a large sauce pan place 5 cups of water, bring to a boil, add the chicken and bring it back to a boil. Turn off the heat, discard the water and wash the chicken clean. This first water is full of impurities, I always discard it. Clean the saucepan and add 8 cups of water, return to a boil and put the chicken back it to the saucepan. Add the onion, ginger, fish sauce, sugar, 1 tsp salt, and pepper and let it simmer for 30 mins, skimming the impurities from the surface.

While the chicken is simmering, in a clean saucepan, fry the mung beans over low heat until fragrant but not brown. Add fried beans to the chicken stock. Decrease the heat to a simmer and cook the mung beans, stirring regularly, for 25 to 30 mins.

After 30 mins of cooking, remove the chicken and plunge into ice water for 10 mins, reserving the stock. Put the chicken in a colander and allow to drain. Shred the chicken into bite-size pieces, then marinate with 1 tsp of salt, a pinch of pepper, juice from 1/2 lime, and add in Vietnamese coriander leaves, mix well and set aside.

In the same sauce pan you fried the mung beans, fry rice over low heat until fragrant but not brown. Discard onion and ginger from the stock, then add rice to the soup, stirring up so rice and mung beans are mixed evenly. Cook for around 25-30 mins or until rice grains have bloomed and curled, stirring regularly to avoid scorching. Taste and add extra salt, as necessary.

Fold the shredded chicken through the chao and ladle into individual soup bowls. Garnish with the sliced scallions, cilantro and squeeze in couple drops of lime juice as desired.

Serves 4.

Breaded Chicken Breast Cutlets Fried in Grapeseed Oil, Cauliflower and Cheese Sauce and Salad

Ingredients:

Chicken Breast
Grape seed oil
breadcrumbs
flour
egg
Cauliflower
butter
Gruyere Cheese
lowfat milk
Mixed Salad greens
crumbled feta
pecan halves
Balsamic Vinaigrette

Pan Fried Chicken

* Pound your boneless chicken breast gently so they are very thin
* Whisk 2 eggs
* put a layer of flour on a paper plate
* put a layer of bread crumbs on another paper plate
* dip the breast in the flour, then the egg, then the bread crumbs
* Lay gently on a clean paper plate and set aside

* Steam your cauliflower for 3 minutes and drain

In a sauce pan melt 1 tbsp of butter and 1 tbsp of flour together, whisk in a cup of 1% milk and stir constantly over a medium high heat. When mixture thickens, add 2/3 cup of shredded Gruyere cheese and add salt and pepper to taste. In a small baking dish put your cauliflower on the bottom and pour sauce over it. Bake till slightly brown in a 350 degree oven.

* Put a hand full of pecans on a piece of tinfoil in the oven for 5 minutes.
* Add to mixed greens and sprinkle with Fetta
* Toss in a Balsamic Vinaigrette Dressing

Getting to Nakuru Kenya

Regular buses, Matatus, and the odd Peugeot (shared taxi) leave the chaotic stands off Mburu Gichua Rd for Naivasha.

Matatus fro Molo (Kshs 100, one hour) leave from Crossland Services (Mburu Gichua Rd), while services to Kampi ya Samaki (for Lake Baringo) leave further south on Mburu Gichua Rd. Kampi ya Samaki ( kshs 200, two and half hours) costs slightly more and takes 30 minutes longer to reach than Marigat.

Quick Chicken Marsala Recipe

The name itself suggests that it is an easy to cook chicken Marsala recipe. It cooks within just 25 minutes. It is a hassle free recipe. It is an elegant and rich at the same time healthy recipe. Ingredients

Pan Fried Chicken

Butter - 1 tablespoon

6 boneless, skinless chicken breasts

Condensed golden mushroom soup - 1 (10.75 ounce) can

Marsala wine - 1 and 1/4 cups

Directions

Take a large deep frying pan; melt some butter in that pan over medium heat and then sauté the six boneless chicken breasts in that melted butter. Once chicken is browned lightly and properly on all sides, add Marsala wine and condensed mushroom soup in the fried chicken without diluting it. Put a lid on the pan to cover it properly and let the whole mixture simmer for about 20 minutes until chicken loses its pink color inside and the juices that come out are clear. Remove it from heat and serve it hot.

You can use fresh mushrooms in place of canned soup, as there is nothing better than a fresh food. You can stir-fry the freshly sliced onions and mushrooms along with the chicken so that freshness remains. You can use lemon juice and white wine instead of Marsala. Capers and parsley can also replace mushrooms. It will make it taste different altogether. If you like to serve it as a dinner platter, then serve salad or green vegetables alongside. You can add flour to that mixture to make it thick. You can spread the dish over pasta to make it look like authentic Italian dish.

This tomato chicken recipe takes 30-40 minutes to prepare and this quantity is best to serve for 8 persons.

Ingredients:

Pan Fried Chicken

1 kg chicken pieces
6-7 medium size tomato (cut into large pieces)
200 gm yogurt
1 tbsp redchili powder
1 tsp turmeric powder
2 tbsp ginger garlic paste
1/2 tsp crushed fenugreek seeds
1 tsp crushed coriander seeds
1 tsp crushed cumin
1 tsp crushed black pepper
1/2 tsp crushed carom
1 tsp crushed fennel seeds
5-6 large green chilies
Salt to taste
1 cup oil

Cooking Instructions:

1. In a deep frying pan, fry chicken pieces in oil on medium high flame for 10-12 minutes and add 1 tspn of salt in the chicken after 2 minutes. Fry until all the water of chicken would have been dried and become white in color.
2. Now drain out chicken pieces from the oil and in the same oil cook gravy for chicken by adding tomatoes, ginger garlic paste, salt, red chili powder and turmeric powder. Cover the pan and cook them together on medium heat for 8-10 minutes until all the tomato pieces become soft.
3. When oil starts to appear on the top of gravy add yogurt and fried chicken. Again cover the pan and cook on medium heat until chicken become tender, it would take 10-15 minutes and add water in between if gravy gets dry.
4. Now in take a small pan and add all the crushed spices and roast then together for 1-2 minutes until pleasant smell starts to come from the spices. Don't roast them too so that they become dark brown in color, just roast to get the little aroma of spices.
5. Put the roasted spices and green chilies into the chicken gravy and cover the pan. Cook for 5 minutes more and when oil starts to appear on the surface of the chicken gravy switch off the flame.
6. Take out the delicious tomato chicken in a serving dish and sprinkle with thin slices of ginger. This tomato chicken is best to enjoy with naan or fried rice.
